Creamy Cauliflower Cheese Soup!

yummy, just made cauliflower cheese soup from the little book of soups, its lushh! so thick and creamy, if i was served it at a restraunt, i'd be a happy bunny:) only needs very few ingredients to. It works out at 2.5 syns per portion and serves 4 people. I actually halved the recipe and made it to serve 2 for me and mum but i'll post the original amounts to serve 4.

ingredients:
1 onion chopped
1/2 tsp smoked paprika (plus extra for ganishing)
800ml vegetable stock
550g cauliflower
10 extra light laughing cow triangles

Method:
spray a pan with low calorie cooking spray (i used frylight better than butter) and add the onions and paprika and fry for 5 minutes.
Pour in the stock and cauliflower and bring to the boil. Then cover and simmer for 15 minutes.
Stir in the cheese triangles.
Blend with a hand blender or in a food possessor. Keep on low heat till ready to serve and garnish with a pinch of paprika.

How is this reheated? Does it freeze? Sounds amazing! X
