red lentil curry recipe
An easy & cheap veggie meal.
- fry light
- 1 onion chopped
- 1 garlic clove crushed
- turmeric 1 tsp
- curry powder 1 tsp (to taste)
- red lentils 150g rinsed well
- ½ teaspoon chilli powder
- vegetable stock 1 pint (may need more)
Heat the frylight in a large saucepan and fry the onions until brown and soft.
Add garlic and spices and stir. Add the lentils and 3/4 of the stock and bring to the boil. Simmer for 30 mins or until lentils are cooked and swollen. Add the rest of the stock if necessary
