    Easy Bread and Butter Pudding with WW bagels

    I just made up a microwave bread and butter pudding and it was lush, just like the real thing. I used a weight watchers bagel which technically has 8 syns in but personally I have these as a HEb plus 2 syns as they have more fibre and less fat in than the equivalent in wholemeal bread and are just 160 calories. The bagels hold the mixture together much better than nimble which just sort of disintegrates! So that makes 6 syns and a HEb for the whole thing.

    1 WW bagel (1 HEb and 2 syns or 8 syns)
    2 small eggs
    2 tsp flavoured coffee syrup (I used gingerbread) (2 syns)
    15g sultanas (2 syns)
    20 ml skimmed milk from HEa allowance

    Slice bagel in half then into quarters. Layer in a bowel with sultanas. In a seperate bowel whisk the eggs, syrup and milk together. Poor over the bread and leave to soak in for half an hour. Sprinkle a little cinnamon over the top. Microwave for 3 mins or until puffed up and set.

    This serves two easily or one greedy person like me!

    I umm... may have eaten half of it before I took the picture...
