    Food fit for a King...or a Princess! :-)

    Since starting Slimming World, my cooking has definitely come on a lot. I now make all of my own meals and (if I do say so myself!) I'm starting to become a bit of a dab hand in the kitchen!

    I've taken some inspiration from Elle's "Food Porn" thread, and I thought I would start my own over here, posting any scrummy meals I make - with pictures included, of course!

    I'll start off with last nights dinner:

    Flattened chicken breast topped with tomato puree, red peppers, jalapenos, 3 slices of of Sainsbury's chorizo (2.5 Syns) and cheese (HExA). Carrot batons seasoned with garlic and chilli and roasted in the oven. And a nice little pile of salad. Wowzer!!

    Ahh, I love Elle! She's such an inspiration to me, and such a lovely, genuine person. Her thread was the main inspiration for mine, I find it really motivational!

    A chicken breast stuffed with sliced red pepper, jalapeno's and cheese (HExA). "Wrapped" in 3 slices of Sainsbury's chorizo (2.5 Syns) and served with carrot fries and salad. Yum!!

    3 x Linda McCartney Rosemary and Red Onion Sausages served with Mustard Mash (HExA milk and 1 Syn for 2 tsp wholegrain mustard), roasted Mushrooms and Red Onions and mixed Garden Veg (carrots, peas, green beans, etc.)

    Proper comfort food!! So tasty and filling, yum yum!

    More food porn! Quite simple but very tasty and filling, tonight's tea:

    Quiche made with 3 x eggs, Quorn pieces, red pepper, mushrooms, red onion, cherry tomatoes and 40g Low Low grated (HExA). Served with a small tin of baked beans with a tbsp chilli powder stirred through. Divine!

    Thank you! No I don't, too much faffing around. I don't par-boil my chips when I make them with potato either. I just pop them on a lined baking tray with some FryLight and lots of garlic & chilli and then pop them in the oven to roast. Delicious! X

    I used to faff around boiling them but now I put them in the microwave for. 5 mins to soften then put them on baking tray and cook in the oven, I do rice in the microwave now too, I don't get on with saucepans! Lol x

    Quorn ginger, chilli and lime sticky fillet. A roasted red pepper stuffed with savoury rice. And some roasted mushrooms, red onion and cherry tomatoes with garlic and chilli. Totally Syn free and very yummy!
