Any one got any low syn quinoa recipes for Extra Easy?

I've only had quinoa a couple of times before a while ago and I remember thinking that watching paint dry would be more exciting than eating quinoa :) However, one recipe I did quite like was for a breakfast dish:-

110g Quinoa
240ml milk (can be used as a healthy extra)
240ml water
1 egg white
Pinches of cinnamon, nutmeg and ground ginger
Small pinch of salt
2 tsp Splenda (or other free sweetner)
Dash of vanilla extract
Fresh fruit of your choice (I used blueberries and raspberries but apple would work well too)

Rinse the Quinoa and put into a saucepan. Heat it until the grains separate and then add the milk, water, cinnamon, nutmeg, ginger and salt. Simmer for about 20 minutes and then mix in the sweetner and vanilla extract.

Whisk the egg white in a bowl and add the quinoa mixture a spoonful at a time so that the egg white mixes in properly. Should only need about 5 spoonfuls of the quinoa mixture for the egg white to incorporate properly. Mix this back into the rest of the quinoa and cook for another minute or two.

That's it, just put some in a bowl, top with fruit and enjoy. I got this recipe off a website somewhere but can't for the life of me remember which one! It tasted nice though. I also think it would be nice if the spices were left out and replaced with coconut extract instead with pineapple used as the fruit.
 
I just use it instead of rice, so with currys etc. it's not all that exciting on its own so is good with something with a sauce.

I had this the other day, I cooked it with curry powder & onion, & used it as a base for my quorn which I'd marinated in lemon juice & chilli & roasted in the oven, very nice.

Have you tried 'recipes uk' website you can put an ingredient in the search bar & loads of ideas pop up & lots you can make SW friendly.
 
I love quinoa!

For breakfast cook it in water or milk with some cinnamon and vanilla essence and raisins (sun) and put some fat free yogurt over it. It's so delicious!

For dinner I often make it like it's rice etc. Cook it in half a vegetable stock cube and it's seriously delicious!
