Extra Easy: Carbonara

Hello fellow SW buddies,

I'm not a newbie to this just on a new aka as issues with my old aka that I haven't been able to resolve yet.

We made a carbonara tonight with soft cheese.... sainsburys own not primula as suggested by the original recipe as couldn't find the primula light.

I found it to be really dry and wondered if anyone has a nicer, creamier ingredient suggestion please. I will retry the recipe with primula light in the mean time when I find it somewhere.

Any help would be appreciated, thanks.
 
I use asdas own soft cheese but if I find its looking dry I add some of the pasta water. Have you tried creme fraiche, quark, or cheese triangles?
 
Pete’s Spaghetti Carbonara (2013)

Serves 2
Ingredients
3 Eggs (ff)
Sainsbury’s wafer thin ham, chopped in to strips (ff)
6 “Laughing Cow” extra light cheese spread (1Hea/2= 0.5syn per person)
30g Strong Cheddar, grated (1Hea/2=0.5 syn per person)
200g Spaghetti (ff)
S & P

Method
Cut the ham into small pieces approx. 2 x 1cm, set aside.
In a pan full of boiling water, cook the spaghetti for 8-10 mins until “Al Dente”, drain and cover.
In the meantime, in a glass bowl, add the eggs, cheese, S&P and mix together.
Return all ingredients to the saucepan and mix well; cook until the eggs have set.

(you could add fromage frais if you like but dont allow it to get too hot or it will split, put it in after you remove it from the direct heat, wait 1 min then add, then plate up.
