Chicken for dinner ideas please

Hi all

Having good old chicken tonight but I'm sick of curries, pasta and wrapped in Bacon. Does anyone have a different chicken and tasty recipes that I can use? If syn free that would be even better. I want to change up my eating habits, sick and tired of same old same old

I made this yesterday using chicken!

Pete’s Chicken & Mixed Bean Casserole (2014)

Serves 4

Ingredients

1 Onion, finely chopped (s) (sff)
1 Chicken stockpot
1Tbsp Hot Paprika
1Tbsp Tomato Puree (s) (sff)
2 Garlic Cloves, finely chopped (s) (sff)
100g Mushrooms, quartered (s) (sff)
400g Mapolina 5 Bean salad (s) (sff)
460g Skinless Chicken thigh fillet, cut into chunks (s) (ff) (approx. weight)
500g Passata (s) (sff)

Method

Pre-heat the oven, set on the “Eco” setting (90C)
Cook the chicken chunks in a casserole dish until the chicken is all white, allow to brown, add the stockpot, onion & garlic, cook for 5-10 mins mixing well.
Add the beans & liquid, passata & mushrooms, mix then add the paprika, tomato puree & season well, cover & bring to the boil then reduce the heat to a simmer for 10 mins then transfer to the oven if you want a long slow cook. Serve with rice.

What about sweet and sour chicken or sweet chilli using the syn free recipe then put it with some noodles or rice x
 
Some boss ideas here im going to have to look at some of these for the weekend?
 
Pete’s Chicken Mexicana

(Adapted from ”Pan-cooked chicken dishes”)


Serves 2

Ingredients

1/2tsp Cayenne Pepper
1 Large Onion, cut into quarters (s) (sff)
1tsp sweet chilli sauce (0.5syn/2=0.25syn per person)
2 Chicken breasts (ff)
2 Garlic Cloves (sff)
2 Sweet peppers, finely sliced (s) (sff)
2 Chillies, deseeded & finely chopped (s) (sff)
2tbsp white wine vinegar
90g low fat cheddar cheese, grated (2xHea/2=1 Hea per person)
125mL passata (s) (sff)
300ml stock using a Knorr “chicken” stockpot
Shake of Salt

Method

In a food processor chop the onion, chillies & garlic to a puree.
Cook the chicken in a frying pan sprayed with Fry Light, cook until browned then removed from the pan and set aside.
In the pan cook the passata, peppers, the puree & stock, season with sweet chilli sauce, white wine vinegar, salt & cayenne pepper, then bring to the boil, reduce the heat to a simmer, return the chicken to the pan, cover, and cook for 20 minutes.
Move the chicken to a plate and add the cheese, cover for 5 mins, allowing the cheese to melt.
In the meantime, increase the heat and reduce the sauce to half the volume.
Plate up, serve with vegetables & cover with the sauce.
 
I've had a few of the Coleman's season and shake packets. The flavours I've had (BBQ, rustic, lemon and herb, Mediterranean) range from 3-5 syns for the pack but you can half that if cooking for 2 as I do. They are delicious and the chicken is so tender and tasty. Highly recommended!
 
Liking the replies so far people, gonna have to try some
 
I have just had chicken pilaf,
Boil some rice
While cooking fry off some chicken it says thighs but breasts would work just chop them into bite size pieces and onion for about 6 minutes
Add tablespoon of curry powder and half teaspoon cinnamon
Add 400g of frozen mixed veg
Cook for 4 minutes
Then add rice and heat for two minutes.
From the new ee express book, was delicious and quick
 
Can diet coke (cherry coke zero is immense)
6 tablespoons passata
1 table spoon Worcester sauce

I brown off chicken/red onion/red pepper in pan
All all the above
Season
Leave to reduce

Simple and delicious.
