Loveliest lunch ever!

Was a bit pushed for time today and tried the 'quiche in a mug' from the SW website, absolutely delish and might just be a new addiction lol. For anyone that hasn't heard of it spray a large mug with low cal spray, crack 2 eggs in and your fillings (I had ham, tomato, spring onions and a synned grated babybel otherwise it would have been free) season it, whisk it all up and stick in the microwave for a few minutes, done! The SW site said 2 minutes, it took about 3 for mine must be a lower wattage or something but definitely worth the trying x
 
It was gorgeous, Jolly! I thought it would turn out like a nasty micro scrambled egg mix or something lol but it didn't. The frylight stopped it sticking and it really was like quiche minus the crust. Spray the insides and bottom of the mug with it and that's it x
 
I need to have more faith in the SW recipes- I've now made a few and they've all been amazing, yet still i wouldn't trust these little quiches until
Someone else has tried and tested them!!!! ;-)
 
Will definitely be trying this. Sounds like it would be a quick breakfast as well.
 
I saw this when I was looking on the website the other day

Having followed slimming world before, I have only just braved making the slimming world quiche in the oven as it had cottage cheese in - I am now in love with cottage cheese and eat it as a side with salad too!!

Good to try new foods!
 
I am doing a favour for a friend this weekend and she is going to give me some fresh eggs from her hens, so I might try this. I absolutely refuse to call it a quiche, though!

I am not slimming world but do browse your forums occasionally as I find a few low carb treats on there.

Am eating this amazing quiche as I type... Just eggs, cheese and turkey ham but still so amazing!

Oh I know! I know! At least a dukan version.

If you want I can copy it here for you? It's got oat bran or wheat bran and egg white and other stuff I can't remember :)
 
I had one today for lunch, absolutely fab added some cherry tomatoes. I really wish I'd bought more eggs as will be making this all week. :D

Oh yes please! I think the SW one is options, sweetener and something else but always up for trying anything else that I might be able to do lol! Glad that everyone liked it. I'll be having this one all week too. Definite winner :) xx

Copied out below... I have replaced oat bran for one tablespoon of wheat bran and found that it tasted better as the bran didn't settle. I use Splenda and end up needing about 5 sachet to get a sweet enough cake.

Hope you like it!

Chocolate Mug Cake

2 tablespoons oat bran
2 tablespoons skimmed milk powder
½ tablespoon low fat cocoa powder
1 teaspoon Baking Powder
Sweetener to taste
1 egg
3-4 tablespoons skimmed milk (6 dessertspoons milk)

In a very large mug: Beat the egg and 3Tsp of milk together Add the Oat Bran, milk powder, sweetener, cocoa and baking powder. Mix very well. It should be quite liquid. If necessary, add another 1Tsp of milk. Microwave for 3 minutes on high
