Syn free chicken and spinach curry
4-5 chicken breasts
2 onions (finely chopped)
3 garlic cloves (finely chopped)
1 tin of new potatoes
2 tsp cumin seeds
2 tbsp.mild curry powder
1/2 tbsp chilli powder
1 tbsp garam masala
1 tbsp ground coriander
2 tins of chopped tomatoes
frozen spinach medallions
Start by cutting the chicken breast into cubes, then brown the chicken in 2 sprays of frylight then set aside
Brown the onions and garlic and cumin seeds in 3 sprays of Frylight until fragrant then add the chopped tomatoes, simmer for 2 mins then add curry powder, garam masala, chilli powder and coriander. The measurements of spices are just guidelines so add according to taste.
Add the chicken and drained new potatoes and simmer for 20 mins then add the spinach medallions. I personally add around 9 as I like spinach but can use as many as you like.
