Stuffed Mushrooms?

I'm wondering if anybody has a recipe for stuffed mushrooms using cottage cheese with chives? I saw a sw recipe book for this but can't remember which one!

Any help would be appreciated :)

Cook time: ready in under 25 minutes
Total time: Less than 30 Minutes
Syns per serving:



  • 8 large flat field or portobello mushrooms
  • low calorie cooking spray
  • 4 scallions finely chopped
  • 3 garlic cloves, peeled and crushed
  • salt and freshly ground black pepper
  • 8oz fat free cottage cheese with chives
  • 1 tbsp finely chopped fresh chives
  • 2 tbsp finely choppd flat-leaf parsley
  • 4 level tbsp grated parmesan cheese
  • 2 oz baby leaf spinach
  • crushed pink peppercorns and chopped chives to garnish

method


  1. Preheat the broiler to medium-high. Trim and remove the mushroom stalks and finely chop them.
  2. Spray a non-stick frying pan with low calorie cooking spray. Add the chopped mushroom stalks, scallions and one crushed garlic clove and stir fry over a high heat for 6-8 minutes.
  3. Season well and transfer to a bowl with the remaining garlic cloves, the cottage cheese, lemon zest and chopped herbs.
  4. Place the mushroom caps, broil side up on a broiling pan in a single layer and season well. Divide the stuffing among the caps and sprinkle with the Parmsan. Place the pan about 12cm from the broiler and cook for 6-8 minutes or until the tops are golden and bubbling.
  5. Divide the spinach leaves between four plates, top each with two stuffed mushrooms and serve immediately garnished with the pink peppercorns and chopped chives

They were quite nice, but I did miss the gooey cheese, so I'm making with philly tonight using my HEx A

Had this today for my lunch! Instead of the cottage cheese and garlic I used some garlic and herb Philly (it needed eating!) it was absolutely delicious. Even my OH was impressed and that's saying something lol x
 
How good are they?? I made them with HEx A philly allowance on Monday and it filled 3 x large mushrooms!! :crazy: ...I ate all 3!

I chopped up some ham and added to the spring onions, even put a bit of cottage cheese in there too! ...cheated and put a few shavings of parmesan on top. Mmmmmm

The first time I made them i used cottage cheese on it's own, not the best but ok. This time i used mostly Philly and mixed in a few spoons of cottage cheese, much better and filled the shrooms a bit more, I would recommend it.

The ham was nice, I got some special ham from aldi it was lush. Will try chorizo next time good tip :D x
 
I am obsessed with Garlic Mushrooms... but I could try the egg version for breakfast I suppose? Do you bake in the oven, and for how long?
