    Thumbs up SW Magazine Green Thai Curry

    Anyone else tried this issues green thai curry???? Oh my word it is amazing, Hubby couldn't believe it was a SW recipe and said I had to make it again soon. The only thing I thought was the sauce was slightly to thin but I put that down to the fact that it was light coconut milk. I halved all the ingredients as only making it for the 2 of us but will deffo be trying that again.

    Haven't tried it yet but will now!
    I wonder if it was more 'authentic'- when I went to Thailand the curries were a lot thinner than, say, Indian curries, almost soup-like but packed with flavour :-) x

    Hi,

    I've made it several times. I have the Asian SW cook book. It has lots of gorgeous Asian dishes. My hubby can't believe they are SW too!!!!

    Yeah it is even thinner than the authentic Thai curries. Because of the chicken stock. Normally you would have more coconut milk and much less chicken stock. If you want it slightly creamier then you can substitute some if the light coconut milk and decrease the amount of chicken stock Then you'd have to add the extra syns.

    I'm making it again tomorrow as. We just love it!!!!
