Ideas for fish

Hi I love fish - but don't have any ideas to make it more exciting for my daughter and I .

If anyone has some tasty fish recipes please share - for salmon tuna steak cod haddock ect .

Only one I do ( and it's getting boring )
Tuna in soya sauce and lime with green beans spring onion kind of stir fry

I usually make a tomato sauce - onion, garlic, peppers, mushrooms, tomatoes, tomato puree, herbs. and put it on white fish.
For salmon I put a dressing of soft cheese mixed with fromage frais.
 
I do with salmon just about what you do with tuna!!!

I love fish too but am not confident about cooking it

Theres a recipe on-line for "salmon curry in a hurry" which looks lovely. I'll see if I can copy it

ingredients[/h]
  • Low calorie cooking spray
  • 1 large onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp ground ginger
  • 1 tsp korma curry powder
  • 400g can chopped tomatoes
  • 300ml boiling vegetable stock
  • Salt and freshly ground black pepper
  • 500g skinless salmon fillet, cut into chunks
  • 500g frozen broccoli florets
  • Small handful of finely chopped fresh coriander

  • Spray a large non-stick frying pan with low calorie cooking spray and place over a high heat. Add the onions and garlic and stir-fry for 1-2 minutes, then add the ginger and curry powder and stir-fry for 1 minute. Stir in the tomatoes and stock, bring to the boil and cook over a medium heat for 6-8 minutes.
  • Season the salmon pieces and add to the pan along with the broccoli. Cook for 5 minutes or until the fish is cooked through.
  • Remove from the heat, check the seasoning, scatter over the coriander and serve with boiled basmati rice.
Tip: * Suitable for freezing
 
I usually just have fish and SW chips with mushy peas haha. But I'm trying a recipe this week with a salmon steak and prawn "salad". Cook whatever veg you have lying around in a steamer - meanwhile coat the salmon and prawns in spices of your choice (I used a jerk spice mix) then cook with frylight in a griddle pan til cooked through and a little charred. Add some passata to the pan and heat through. Serve with the veg straight away.
 
I cook my fish in the oven, pour a tin of chopped tomatoes on top with garlic and spicy Italian herbs, pop back in the oven with my hex a cheese allowed sprinkled on top until melted and serve with wholemeal pasta :) so quick and easy and really tasty.x
 
Salmon parcels
Serves 2, 1 syn each on EE

1 pack Ainsley Harriott Moroccan Medley Cous Cous (1.5 syns)
200 ml hot water
Handful chopped fresh coriander
4 spring onions , thinly sliced
8 roasted cherry tomatoes
2 salmon fillets, approx 140g each

Put the cous cous into a bowl and stir in the water. Cover with cling film and leave to stand 10 mins, then uncover and fluff up with a fork. Keeping back some coriander, add the rest of the ingredients, except the salmon. Season to taste.
Heat oven to 200C. Cut two large sheets of non-stick baking paper, then divide the couscous between them. Sit each fillet on the cous cous, top with the remaining coriander and season. Fold the paper over, then twist the edges to seal - like a pasty. Pop the parcels onto a baking sheet and bake for 15 mins or until the fish feels firm through the paper. Serve in the bag.

To be honest I tend to throw whatever veg I like in, those jarred roasted peppers are good in it too.
 
Line a deep oven dish with tinfoil and place in your fish, I use cod.

Mix one of these OXO | Roast Garlic & Parsley with a little boiling water, enough to drizzle over the fish.


Parcel up the tinfoil and whack in the oven until cooked through. Yummy.
