    Lentil, Carrot and Potato Soup

    serves 4
    free on EE and green

    1 onion, finely chopped
    2 garlic cloves, crushed and chopped
    1 large potato, peeled and diced
    1 large carrot, peeled and diced
    600ml vegetable stock
    125g dried red lentils
    600ml passata

    spray large saucepan with cooking spray.
    add onion, garlic, potato and carrot. cook for 1-2 mins
    add remaining ingredients and bring to the boil
    cover and simmer for 15-20 mins (until lentils are cooked)
    season well and enjoy

    just made this for lunch - it's quite filling and definitely yummy. I'm not really a soup person and tend to like something a bit chunkier

    don't see why not. Would probably make it even more chunky - good thinking! I would probably use two tins in that case though
