SCAN BRAN RECIPES ANYONE?

Hi Everyone,
I am trying to eat my scan bran seeing as it is a speed food but am struggling, I have made the scan bran sticky toffee pudding, scan bran parkin & scotch eggs but would like some different recipes - does anyone have any that I could try? I have made all these so many times now that I just can't face them anymore....

what about the carrot cake? It looks like mush, but tastes lovely:

4 Scan Bran (crushed)
5oz carrot (grated)
1 tsp cinnamon
1 tbsp runny honey
3 eggs (beaten)
1 weetabix (crushed)
½ tsp mixed spice
1 tsp nutmeg
2 tbsp mincemeat

1. Preheat oven to 180C/350F/Gas Mark 4.
2. Place all the ingredients into a large bowl and mix well.
3. Turn the mixture into a lined tin, cover with foil and cook for 30 minutes. Remove foil and cook for a further 30 minutes. 4. Turn out onto a wire rack to cool.


12.5 syns the whole cake, or a HEb and 7.5 syns

Diet: Slimming World
Start Date: July 08
Parkin Recipe is:

4 Scan Bran
28g Porridge Oats
1 Tablespoon Black Treacle
1 Mug of Granulated sweetener
1-2 eggs (I use one large one)

Method:
Soak scan bran in boiling water, drain off excess water & mash it up, add the rest of the ingredients, pour into a cake tin & bake at around 180 for 45 - 55 minutes

Whole Cake is 3 syns plus 1 B choice

I make a double amout, slice it and freeze it, have it for breakfast, counts as a healthy b plus a little syn!

Hi folks! Have not tried the above recipies - I'm too much of a coward to have anything like syrup or honey or even mincemeat in the house, so have come up with some VERY simple and quick MICROWAVE recipies for Scan Bran. Hubby and I both reached target weight together last month, and are both convinced that SB helped us to get there! We've posted these on our own group Facebook page, and also sent them to SW hq. Do hope these help, and would be delighted to read anyones variations!


Scan Bran and Oat Bran Recipes
Note:
(a) Deduct 2½ syns from each recipe if you use the Scan Bran as a Healthy Extra “b” choice.
(b) We use “wizzed” carrot in all our recipes – this gives it more bulk and a more cake like texture.
(c) We find pouring boiling water over the whole slices of scan bran for exactly I minute softens it perfectly – not too soggy.
(d) It works very well with FROZEN fruit – saves it "evaporating" whilst defrosting!
(e )We always turn it out upside down, leave it to cool a bit and then give it another 2 minutes in the microwave, otherwise it is undercooked on top (if you see what we mean)
(f) These will keep covered in the 'fridge for 3 or 4 days – not in a sealed container, on a plate with a bowl over it seems fine – if you can resist them that long!!


Scan Bran Raspberry and Chocolate Cake
This is a luxurious cake which will satisfy all your cravings, and is quick and easy.
Syns for the whole cake 8 - that's just one syn per slice!


Basic Ingredients:
5 Scan Bran (or Oat Bran) - ½ a pack (2½ syns). Only available at Club!
2 large carrots finely grated or wizzed in a mini chopper (about 150 gms)
Low calorie sweetener to taste – 3 or 4 tbsp
3 eggs beaten
Special ingredients:
2 packets of Options Belgium Chocolate (4 syns)
150 gms frozen raspberries (as these are microwaved, you have to count 1½ syns)


Method:
1. Pour boiling water over the Scan Bran and leave for 1 minute so that it softens,
then drain and mash.

2. Blend the Scan Bran, carrot, sweetener and Options, mixing very thoroughly. Stir in the frozen raspberries. Then add the beaten eggs and stir until completely mixed. Transfer the mixture into a microwaveable dish – about 6½” or 16cm in diameter.
3. Microwave on high for about 15 minutes, or until it's cooked. The end product should be reasonably moist. You may need to experiment with the cooking time depending on the power of your microwave. (We turned it out upside down, smoothed it over and gave it another 2 minutes in our 800 watt microwave as the bottom was not completely cooked). BEWARE - if you taste this now, the fruit is BOILING!!!


Scan Bran “Black Forest Gateau”
Syns for the whole cake 9½ Syns or 10 syns with cocoa


Basic Ingredients:
As before
Special ingredients:
2 packets of Options Belgium Chocolate (4 syns) OR 1 oz (28g) cocoa powder (4½ syns)
150 gms frozen cherries (as these are microwaved, you have to count 4 syns)


Method:
Exactly the same as before
NB the cocoa makes it darker, but for a really dark gateau add 1 teaspoon of black food colour.


Scan Bran Ginger cake
Syns for the whole cake 6½


Basic Ingredients:
As before
Special Ingredients:
2 tsp ground ginger
1 tsp of ground all-spice or to taste
1 tsp cinnamon
28g finely chopped stem ginger (4 Syns)


Method:
Exactly the same as before


Scan Bran Savoury loaf
Syns for the whole loaf 3½


Basic Ingredients:
As before without the sweetener!
Special Ingredients:
2 tbsp Bovril (or Tesco's Beefy)
2 tbsp Tomato paste from tube (1 syn)
4 tsp Soy sauce
4 tsp Worcestershire sauce
Additional vegetables we used:
Frozen peas – no need to defrost
Diced beetroot
Finely diced carrot (bigger pieces don't cook properly)


Use anything else “colourful” you can think of, the total should be 150 - 200 gms, much more and the loaf does not stick together well, and is difficult to slice. We've used chopped leeks, capers, peppers, sweetcorn and also added garlic or harissa paste to vary the flavour – use your imagination but check the syns!


Method:
Exactly the same as before including the 15 minutes cooking time and the 2 minutes turned over, but we used a loaf shaped microwaveable container minimum size 6½” by 4½” or 18cm by 11.5cm.


Slices were great cold with salad or hot with vegetables and would be easy to transport in a lunch box.

I don't know if anyone else saw this on BBC Breakfast last week, but a lady who had just got a book published came on with a plate of iced cakes, which Bill and Kate had been looking forward to all morning. I wasn't paying much attention, and I don't know WHY, but the ones they tasted had courgette in them, and they both thought that they were much more light and fluffy than normal ones.

This struck a chord with me. We've always added blitz carrot to our Scan Bran cakes, to lighten them, and give them a more cake like texture. Would courgette work?

Hubby made 2 identical Chocolate and Raspberry cakes, one with carrot and one with courgette, blitz in a Delia mini chopper.

It WORKED!!! The courgette one WAS lighter and fluffier than original one with carrot, and is well worth a try, especially as courgettes are a bit cheaper now.

No need to peel the courgette, just trim the ends off and wash it, blitz it and simply replace the carrot with the courgette, approx 150g.

It's well worth a try. As I've said before, Hubby and I are sure that eating Scan Bran helped to get us to target, and we ALWAYS return to it whenever we have a blip!

We'd LOVE to get some feedback, so please do post if you try any of these out - negative replies welcome as well!!!

It's 5 hun. I've just recently discovered the recipes people make with them so I'm really glad you've bumped this thread!

My daughter and I made scanbran choc cake this afternoon - which has just come out of the oven and we are most impressed with. I mean you can obviously taste the bran in it but the texture is very cake like.

The OH's a different matter though - he likes all things chocolate so.....
