Veggie and Vegan Team Anyone?

I'm veggie, I'll join :) I have lots of recipes to share xx
 
I'm in! I made a delicious baked bean lasagne for dinner tonight, syn free (bit of low fat cheese on top as a Healthy Extra) and my meat-eating Joker loved it so much he went back for thirds. :D And if you swapped the cheese for Sheese or something similar, it'd even be vegan. :D
 
Sounds lovely! I haven't made it in a while but did make vegan lasagne a while back using a mixture based on tofu and baked cauliflower as a ricotta substitute. It was absolutely gorgeous and so ingenious with ingredients :)
 
Hi, I'm a veggie too. 8.5lb to target but it may take me a while. Then I'll have to maintain. :) I have a young family so I'm always looking for new ideas. Looking forward to chatting. xxx

So what is everyone cooking today then? I'm off to make the vegan lasagne I mentioned above in a bit. Last time I cooked it I lost 7lbs that week so you never know! ;)
 
have u got the recipe?? im debating getting rid of my pasta and sauce so tomo and i can start on fresh food.... will decide when i can get off the sofa :D

Here you go! I don't follow it exactly, I don't add the spinach and bulk up the tomato sauce with onion, mushroom and lentils to make a kind of spag bol sauce. It's only a couple of syns for the olives and the nutritional yeast, I don't use the oil.

Proper cooking should really help with SW! Although we all have days where pasta n sauce is all we can manage to cook I bet and I have a terrible mug shot habit! x
 
Sunday dinner here today so nothing too exciting but I do a lot of batch cooking of curry's, lasagne's, bakes, cannelloni etc. It helps to be able to pull a ready made healthy meal out of the freezer to defrost and shove in the oven. No idea what to eat tonight. I may just have some scan bran with cheese spread and a yogurt.
 
I really need to start batch cooking again as soon as we get a freezer sorted out! Since we moved house we only have an ice box which is useless for storing much more than some quorn mince and frozen peas lol ;)

The lasagne came out well! Pic attached :D

I am finding the extra healthy B a real bonus on the Green Plan. I cook mainly from scratch and have adapted lots of veggie recipes. I am going to try the Cheeseless Lasagne sounds really yummy!

Looks lovely! I'm not an olive fan either but I'd give that a try.

Chicken pox in my house so I have no time but I'm going to do my best to eat as well as I can.
