    baked potato toppings!

    hi all

    next week we are having a baked potato night at class and we have all been asked to bring in a topping for the baked potato!

    im new to SW and usually have baked beans on jackets but have you got any other ideas?

    You could slightly change the jkts and scoop out the inside, mash the potatoe with VLF cottage cheese with chives and add spring onion

    How about scooping out the insides of a baked potato and mix with 1 oz Philadelphia Garlic and Herb (2 syns) red pepper, spring onion, sweetcorn and bacon (HEB) - this is on a green day, not sure how it would work out on red.

    BMI Information:
    My fave is chive & onion cottage cheese, topped with grated mature cathedral city light and warm roasted cherry tomatoes.

    Or a HEX B of goats cheese, basil or rocket & sun dried tomatoes (1 syn for 28g).

    My tip for a perfect jacket - heat the oven to very hot. microwave jacket for 7-8 mins. Spritz the outside of the potato all over with Frylight, sprinkle all over liberally with salt, place directly on hot oven shelf and bake for 10 mins. Goes nice and brown and crispy!

    Mmmmm...wish I was on a green day today!

    On a green day make chilli with quorn and then everything is unlimited except cheese which is 42g per HEa for RF cheddar. On EE day make with beef then as per above. Not too easy on red as you'd have to weigh your jacket pot and your kideny beans aswell as the cheese.

    3. Get 1.5stone off - 12.5lbs to go!
    4. and the rest!

    On EE the chilli (homemade with etra lean mince) and potato would be free foods then you can use your HEA or HEB for grated cheese.
    This is my favourite JP filling too.

    scoop the middle out mix with marmite and hex cheese chopped fresh tomato and spring onion then scoop back in and bake for approx 7 mins yum

    I reckon I've tried all of the suggestions already given, but my favourite easy topping for a baked tattie has to be a tin of mushy peas, with some freshly ground sea salt, chilli, garlic and pepper ~ might not sound too good, but try it and see ............ yummy!

    Thanks Fallen Angel and also Eternity, eek this means I'll have to get my head around EE!! It seems far too easy! And I'm such a stickler for the rules and sticking 100%, that I think I'd feel as if EE was cheating somehow! I'll search through here for some threads on EE as I do need a bit of help with it. OH makes a lovely from-scratch chilli so this will be added to his list of weekend cooking, he does the cooking at the weekend. We have a wood-burning stove and cook the jackets in that, SO nice!
