evening meals on a budget?

hello all,
just wondering if any 1 has good evening meal's that are cheap?
& nt a lot of cooking lol (nt gd n that department:()
 
My fav cheap meal is pasta (you can get a tonne of it cheap at tesco) mixed with creme freche, fried onions, fried mushrooms and cherry tomatos. Or low fat supernoodles mixed with cut up quorn fillets and sweetcorn. Or buying cheap veg thats been reduced due to the 'eat by' date and roast it along with some sausages.
 
mmm like the sound of the pasta, wish we could get low fat supernoodles where i live (very small tesco lol)
the roast veg sound nice!!
 
I make cheesy Mince from the originals cook book
basically dry fried very lean mince
add onions & mushrooms when cooked
and any other vegi's you have lurking
some beef bovril

then mix VLF cottage cheese & herbs with 2 egg yolks
add to the 2 egg white that have been whipped
and put on top of the mince on a casserole dish

cook in the oven for 20/30 mins till golden brown
and serve with vegi's & pots (use your HXb)

Yummy!
 
My favorite cheap meal is Pasta with 1tbls of pesto(3 syns) mixed into FF fomage frais with 28gms Parmesan( hea) on top.
Delicious.
 
Have you seen SW's new cookbook, Family Feasts For a Fiver? If you don't go to class, could someone you know who does get a copy for you? It has some lovely stuff in it! Chicken bhuna with cinnamon rice, curried pumpkin and white bean soup, lemon chicken and chickpea tagine, red pepper, spinach and sweet potato tortilla, bbq chicken and pepper fajitas, spicy bean and sausage casserole, salmon fish cakes with tartare sauce to name but a few! Yum Yum!!X
 
i made a delicious meal tonight, i have been buying skinless boneless chicken thighs which i think are loads tastier than chicken breast and cheaper too (£3 in asda)

i boiled some veg - potato, leek, carrot, cabbage in knorr stock pot and added some dried egg noodles, added the chicken thighs and voila you have a chicken noodle vegtable soup. put in some herbs, rosemary, thyme, garlic salt just to spice things up. yum!
 
supermarkets own soft cheese with peas and ham and pasta is yummy
buying a whole chicken can due several meals - chicken curry, salad, sarnies, chicken and pasta, risotto, jacket potatoe, roast dinner, chicken and chips etc
 
i only started on tue, was a bit nervious so never asked anything, waited 4 class i saw mag, sitting never knew u could buy them till i saw it on hear, so this week i must buy 1!!
mmm love the sound of the noodle soup!
 
Quorn sausages cooke dand sliced, mixed with baked beans and chilli powder topped with mash in the oven for half an hour ,free on green ,top with HEa cheese.

At the moment M&S have some lovely chicken thighs - 6 to a packet, 2 packets for £5.
 
Heat a fry pan, add some chopped onion, peppers (fresh or frozen) and fry until the onion is softened, add peas, sweetcorn and a tin of Kidney beans in chilli sauce then add cooked leftover rice and stir well, keep on a low/med heat till the rice is HOT (rice that isn't reheated properly can make you very ill).

It's absolutely lovely, if you haven't got leftover rice just cook some strain and add to the veggies.
 
we have leftover meat (rubber gammon at the moment but usually rubber turkey lol) and savory rice or put it ins ome pasta and home made veg sauce

Hi Golden touch,

what pesto are you using? I use the red pesto and 1 tbsp is 2 syns! :) (I hope now I have said this! lol I will double check on the sw website later but pretty sure it is!)
 
actually thinking it maybe 2.5 syns! and then just thought to myself that you may be using green pesto which is higher! Just ignore me! Too early and i'm in work booo! x

Asda and Sainsburys Reduced Fat Pesto is only 1.5 syns per Tbsp
