Hi There
Next weekend i'll be out for the whole day from about 5am so need picnic type food to take with me.. the thing is pasta salads and cous cous are a no no as i need to have my back pack with me all the time and they will be far too bulky.
I've thought of veggie quiche ( no pastry) and fruit but am pannicing i'll be hungry. ideally didnt want bread..
Any ideas please.. and wonderful recipes too?
Thanks in advance xx

I think you would be better of sticking to chicken ( or chickpeas if too hot or you are veggie)and rice or pasta salad. Don't take a massive portion if you are concerned with carrying it around all the time and take loads of fruits. Drumsticks?
Have a lovely time.

You need to bear in mind the food will be getting warm in your backpack, and could become dangerous to eat - so that pretty much rules out dressed salads anyway. In a normal picnic you go later and eat soon after arriving, so the food hasn't been waiting all day.

How about low fat hard cheese (which tends to be reasonably safe for a while) and crispbreads, with whole fruits such as tangerine or apple, and maybe some carrot sticks? Perhaps a cereal bar?

We went on a picnic yesterday and I brought a tub of carrot and celery sticks tomatoes and cucumber and some humus. Also brought fruit and mullerlights too. We were stuffed!

Thanks everyone.. i realised about the heat too..xx the low fat hard cheese.. do you mean baby bel?
also regarding crisps are quavers low in syns do you know? not that i'm going to be eating loads and loads haha x

I was thinking about a normal supermarket low fat cheddar. I mean full fat cheddar is ok out of the fridge too, but I was thinking of your calories :D

Yes I think hard boiled eggs are safe for a few hours too, as long as they have been boiled for 10 minutes and the shell is not broken.

I'd suggest getting an ice pack to stick in your bag. They do those blocks for a couple of quid, they aren't too big, you stick them in the freezer overnight before hand and then pack with your food. Then anything'd be kept nice and cool...

Yeah but then she's back to square 1 with the weight and bulk issue. I guess there's nothing better than meal-replacement diet bars for all-round suitability - light, non-perishable and high nourishment for low calory :)

How about getting some freezer blocks then you will keep the food inside your bag cold or even freeze a bit bottle of water/ nas juice and have a cold drink and something to keep ur food cold and then you have alot more options xx

chicken drumsticks, boiled eggs, couple of Alpen lights as your HEB, fruit, carrots peeled and left in a wee baggie, chickpeas and cut veggies like peppers, cucumber, red onion and some coriander through.

Thanks everyone.. Think i'm kind of sorted now.. its not the keeping food cool bit (I'm an expert on that) it was ideas of picnic food but i'll manage now.
thanks again x
