    Let's talk Veggies

    Hey folks,

    I wondered if you might tell me what your favourite vegetables are? I find that I am always having the same ones and as I aim to have one third (sometimes more) of my plate full of them I do get a little bored.

    I will eat any vegetables apart from peas and brussels sprouts. My current favourites are butternut squash, celeriac, french beans, pak choi, celery and leeks. Ask me again in a few weeks and the list will probably be different. I had a thing for aubergines a while ago, but have gone off those for a while.

    Staple veg in our house is carrots, green beans, cabbage, broccoli, mushrooms, onions, peppers, lettuce, cucumber. Then we will sometimes but curly kale, butternut squash, radish, courgette, parsnips any anything else that might take our fancy / be on offer.

    OOh yes, fennel. Either very finely sliced in a salad (use a potato peeler), or thickly sliced and braised. Delicious.

    Anything, but fennel pretty much. I am more of a veg eater than fruit and I love roasting them. I also stem them and eat them raw, I'm a big fan of veggie sticks. I'm also on a mission to find or make a nice dip. There really aren't any listed in the recipe section unless using the word 'dip' is the wrong word to use.

    If someone could point me in the correct direction for this that would be great.

    There is a nice syn free houmous recipe on here, unfortunately can't link to it om my ipad but should be there if you do a search, one I used to have a lot but haven't made recently is like a raita, fat free Nat yog, grated cucumber, black pepper and a squeeze of juice and little bit of rind from from a lemon. Yummy! Also could make a salsa with finely chopped red onion, peppers, drained tinned plum tomatoes chopped after draining to allow some juice but not too much.

    Thanks that sounds yummy, I can across the humous one the other day myself. I'm thinking more along the lines of chive/onion dips you get from the supermarkets. Will have to try that other one, and totally forgot about salsa! Have attempted one by myself, it's sitting in the fridge to let everything mingle, hopefully it will taste nice.

    A pinch of Salt
    A tsp cumin
    Juice of a Lemon
    Tahini tsp (it Has syns) but i leave it out and put in 3 or 4 peppadew peppers to give it a Kick instead (those little red ones in brine)

    Blitz it all up and refrigerate

    My humous has the same texture and look as shop bought and is totally syn free.

    1 tin of chick peas
    1/2 tub quark
    Garlic, lemon juice and black pepper to your own taste.

    Blitz the chick peas as fine as they'll go first then add the quark and keep blitzing in the food processor until you get the desired consistency
