If the veg content is at least 1/3 of the risotto then you're fine.

I make a syn free risotto - only syns are the cheese if not used as HEa

    Basically chop veggie -
    Onions
    Peppers
    Mushrooms
    Sugar snap peas
    & dry off using frylight

Add to the pan 250g risotto rice & stir
    Season
    Add 750ml veg stock
I usually add some chilli flakes

Add some cherry toms & bang it all in the oven with lid secure ( I use a stock pot/casserole pan for all prev)

    Oven 200o

Takes about 35/40 mins with a stir half way through.

When it's cooked I add things like steamed broccoli, salmon, chicken etc & grated Parmesan

So easy to make & scrummy!
