I agree with S_J_B about herbs and spices. I used to just have mixed herbs in my cupboard, now I have a whole shelf of various things. I buy a lot of tinned fish like mackerel in tomato sauce, and tuna in spring water, both useful for salads or to go with pasta. Fruit and veg is a must. When I started out I stocked up on cupboard staples, in addition to herbs/spices, made sure I had pasta, rice, porridge oats, baked beans, tinned spaghetti, tinned tomatoes etc.
 
Tesco in my area have fat free fromage frais.

Rice and pasta
Eggs
Bacon
Chicken
Oxo
Most fruit,but not too much as some of it is getting expensive
Spuds
Coffee my life saver.

And of course a variety of spices.

Quorn - mince/sausages
Red lentils
Balsamic vinegar
Salad/veg/fruit
400g wholemeal loaf
Baked beans (guilty pleasure)
 
Have also trebled the amounts of herbs and spices I own - I had to buy new spice storage box!

LOL, I've done the same! I had a stand with a dozen different jars on it, but I must have at least doubled that number now and I've had to make drawer space for them :)

I had never heard of Quark before starting back on SW but now I always have some in the fridge.
 
I have also invested in essential kitchen equipment.

A digital kitchen scales (much more accurate)
A set of measuring spoons (so I don't underestimate my syns)
A garlic crusher
Lots of storage boxes for freezing portions of chili, bolognaise etc. This means I always have a healthy option for tea if I'm too tired to cook from scratch.
