Extra Easy Slimmer of the week veggies

Need some tips, i won slimmer of the week tonight & got a loada veggies that I don't know what to do with!! Really would hate to waste anything that the members have donated so need some recipe ideas. I have the following, parsnips, peppers, courgette, swede & potatoes, was thinking of making a big batch of veggie soup but I'm kinda bored of soup at the mo, any suggestions of what I could do with it? X
 
Swede freezes well raw. Chop it up into cubes, bag and freeze. It's ready to cook then when you are having a Sunday dinner or something similar. The other ingredients scream roasted veg to me (but that's because I love roasted veg!!!). You could also make a bolognese and use the courgette and peppers.
 
Cougettes are lovely sliced lengthways and chargrilled. Love roast peppers. Swede - I would cook it, mash it then freeze it.

Parsnips I only really like roasted but have never tried parsnip soup which might be nice
 
curried parsnip soup is yum.
you could roast and stuff the peppers with rice, mince (I'm sure there's a SW recipe for stuffed peppers)
potatoes - SW Chips! :)
or swede and potato mash (made with an egg beaten in instead of milk and butter?)
 
Thanks for the replies everyone, curried parsnip soup sounds lovely & yes I was thinking of roasting the veggies as well so might do both & try swede & potato mash as that sound yummy also!
 
Parsnip chips, potato cakes, swede and parsnip mash, buy some rice paper and make veggie spring rolls Congrats with being sotw how much did u lose?
I lost 2.5lbs, other group members did more than me but it was because I was the only one to lose last week that I got it! I'm taking it tho as a bonus!
 
I lost 3 so I'm delighted with that! Staying in my mams overnight and they keep trying to stuff me with chocolate kimberlys and cake!! I'm just gonna keep my next weigh in in mind cos I have about 7 stone to lose! x
dont ya hate it when the 'rents try & tempt you with food! You can so it tho, just think of next week on them scales. Well done for your 3lb loss by the way x
