I've just restarted Slimming World, giving it a go myself from home and tonight I am making the Piri Piri Chicken from this months magazine. Has any body tried this recipe? I've just made the marinade and am waiting for it to cool before I can whizz it in the food processor. It seems quite watery so I'm hoping it turns out ok. One thing that has got me is the summary says it take half an hour to cook with 1-2hrs marinade time beforehand but the recipe says you should marinade over night and part of the process (which I'm currently waiting for) is for the marinade to cool before whizzing up and then chill in the fridge, this is not allowed for in the timings. I've been caught out like this before and wonder if the recipes are actually tested properly before being published! Does anyone else find this?

I had this last week, and it turned out fine without marinating over night.
I'll be honest, I didn't actually cook this, my oh so lovely mother did, and she did it on the same day... as she had a day off from work, she made the marinade in the morning, let it cool, and then marinated the chicken for a couple of hours later in the day.

Does that help at all?? :) lol
 
Well I have to eat my words - that was lovely! Very filling and a little spicy woah! The recipe was for 10 chilli's - 10!! I put 3 in and that was plenty hot enough for me! I made the full recipe which was to serve 4 and just used half of the marinade and froze the rest to use another day. And my chicken only sat in the marinade in the end for about half an hour, hardly anything at all, but was still very tasty. It got the hubby's approval too which is always a bonus because it means we can have it again! xx
 
My other query about this recipe was that it says it's 1 syn per serving but i'm not sure where that syn comes from, can anybody help? I thought that all of the ingredients are syn free xx
 
If I remember right, there's Mayo in the second half of the sauce? Everything else is free, it's just the mayo that has syns in :)

You're right - its got extra light mayo in it
 
I loved the piri piri! But I don't think I'd bother roasting and chopping the chillis, I will just use flakes next time.

The chopped chillis were under my thumbnails burning me for days!
 
Yes, I have to admit I found myself trying the scurb my fingers and nails raw to get rid of the chilli when I made something else last week!
