Rolo Muffins

Ok so i went a slight bit creative and tried to adapt the weetabix muffin recipe to be more of a 'pudding' as such. All i did was stick a rolo in the middle - so easy lol!

Didn't quite turn out the way i wanted, the caramel kind of seeped out and 'cooked' too long so the crispy edges tasted a little bit like bonfire toffee which i wasn't a fan of but hey ho. I maybe should have made them less and bigger but i preferred two syns per cake in stead of 2 and like a 1/3. I can't cope with the kind of nonsense! lol. Once i'd taken off the crispy caramel bits - they were actually a pleasant surprise!

So what do you think. Any tips or more successful stories?!

They were nicer than they looked. I don't always find the Weetabix/Scan Bran muffins that exciting or too much like something sweet so i guess next time i might just stick to a syn worth of chocolate instead
 
Looks good!! Be interesting to keep my eye on any other recipes on here! Quite the cook myself so i will always try new things!

I've had a go at some others too, you can check out some of my other threads if you want. Maybe i should dedicate a thread to you if you can cook - i really can't cook or bake or anything lol. Please pass on any tips!!! lol i need them!

Haha! Hold on, i said i can cook - didnt say i was any sort of Gordon Ramsy! Only new to this site, so any future creations that i make i will share!

I like Gordon Ramsay - he makes me laugh so much, you could morph into him and adopt his style - he's made a lot from it lol. I look forward to any and all future creations. Shame i can't taste that of a someone who can cook i get so bored of my own!

Yeah sure its the Weetabix muffin recipe, there are a few variations out there but this is what i used:

You need: Two weetabix (HEB or 6 Syns)/2xEggs/Sweetner/1/2 Pot of Syn Free Yoghurt/Vanilla extract (optional) - Rolos - optional

Mix Two crushed up weetabix with sweetner, half a pot of syn free yoghurt and 2 beaten eggs. Mix together and put in silicone cake cases (they work the best i would use these). I then put a rolo in the middle and covered it with a bit of the mixture. Bake in the over 180 for around 25 minutes but keep your eye on them.

I found the rolos actually seeped out everywhere and the toffee went a bit crystallised and tasted a bit like bonfire toffee, which i broke off and left out. The rolos are a syn each and i made 6 (plus a taster too :p) so they ended up being 2 syns per cake or the whole batch would be 1 HEB plus 6 syns in my case. I probably might try making 4 next time but it alters the syns values but with less rolos so more like 1 HEB plus 4 syns or 2 and half syns per cake if four is made with four rolos.

I might even just go with chocolate..... why not!

Thank for this. I think I'll try this tomorrow as I have all of the ingredients. I don't use Nestle products but I think I would definitely substitute it for a square of Galaxy caramel. I don't like burnt caramel/ bonfire toffee taste either which is why I don't usually use caramel for baking, but I'm sure once the bits on the edges which might have seeped out have been removed, it will be delicious. Thinking about it, I could reduce the syns and stick some cinnamon in it and then some quark and chopped bananas and maybe even some blueberries on top.

Good thinking - you couldn't really taste it after i'd taken the crispy bits off the edges - i guess if they were bigger they might be less likely to spill out or something. Next time i think i will just stick to plain chocolate. The fruit is a good idea i often find they need a little extra something, but now i've introduced chocolate fruit will always be a second best now lol
 
I make HEB Muffins with my oat allowance mixed with egg and yoghurt. With a mini-muffin pan, I can make 6 mini muffins and have those for the entire day.
You can fill the muffins with anything, low-syn jam/marmalade, dark chocolate etc.

That's a good idea, i forgot all about making them oat based as well. Any excuse to stick some chocolate in the middle for me lol :p
 
I just saw Rolo's and had to see what it was all about! ;) lmao

I will give it a go at somepoint... I've tried the scanbran cake a long time ago, and I wasn't a fan, so maybe using the weetabix will improve it :)

Haha! I knew i could get attention with the work Rolo lol. Yeah i don't reall find much of a difference if i'm honest - only they are waaaay better with a naughty syn chocolate treat hiding in the middle lol
 
These sound lovely deffo going to give the a try. I wonder if you could melt the chocolate and mix it with the yogurt and the weetabix to make them like little chocolate buns!?

I see no problem why not...... i just loved the hidden surprise in the middle
 
Made them for a second time as requested by family - preferred me peanut butter ones though. Nice gooey centre :D
