    Summer meals ideas

I hate...no, I mean really loath salads. I can't eat lettuce, raw toms, cucumber, raw carrots, beetroot, celery....the list goes on and I'm stuck for some summer meal ideas. I make a nice cous cous quiche which is quite light. I like SW spaghetti carbonara, which again is a light meal. But then I start to falter.

Does anyone have any lighter summer meal ideas?

    BBQ food with coleslaw/potato salad/wedges/jackie P??

Salmon on a bed of ratatouille??

Erm, those wraps that are in the SW mag (basically thin omellete with a filling).

Can't think of any more just now, but I tend to do a BBQ at a weekend and over cook, freeze it, then I have instant lunches/dinners with no need to think about things too much. x

'salad' is just the usual green/lettucey/tomaotey stuff yeah?

What about 'salads' based on other things, like rice or cous cous?

Both niced mixed with cold roast veg. Or mixed beans. Cold tuna pasta salad is good, with sweetcorn (if that's not on the yuk list!) or ooh potato salad with a nice mustard and quark creamy dressing...
