Rock Solid
Creamy Chicken Florentine Soup

This soup is really rich and creamy, as well as filling.

Ingredients
  • 1 tbsp olive oil
  • 1 onion
  • 2 cloves garlic
  • Pinch salt and pepper
  • 280g spinach (can use thawed frozen for ease)
  • 2 pre cooked chicken breasts, cubed
  • 60g cream cheese
  • 750ml chicken stock, low salt ideally
Method
Fry onion and garlic gently until it softens.
Add spinach and chicken until heated through.
Add salt and pepper.
Add cream cheese until it melts (turn heat right down for this).
Add chicken stock.
Cook until it reaches boiling, then simmer for 5 minutes.
Garnish with herbs and parmesan if desired.
 
Maple Almond Flan
This desert might seem a little convoluted (especially if like me you've never made anything using the bain marie method!), but it's delicious and very impressive.

Ingredients
  • 3 tbsp flaked almonds
  • 225g light evaporated milk
  • 90ml skimmed free milk
  • 1 egg
  • 2 tbsp granular sugar substitute
  • 1/4 tspn almond extract
  • 1/4 tspn vanilla extract
  • 60ml sugar free maple flavored syrup
Method
Preheat oven to 160C/325F/Gas 3.
Brown almonds in a frying pan.
Heat evap and skimmed milk in pan till it's simmering.
Whisk egg, sugar substitute and essences.
Add small amount of milk mixture into the egg mixture and whisk.
Add remaining milk mixture to egg mixture and whisk for 1 minute.
Pour into 4 ramekins.
Place ramekins in a baking dish and fill it to hallway up the ramekins with hot water.
Bake in oven for 30-45 minutes until the top looks like a creme brulee.
Top with flaked almonds and the maple syrup.
Allow to cool.
Cover with cling film and refridgerate for at an hour.

Experiment with different essences to create different flavours.
 
Shepherd's Pie (but it's really Cottage, as it's beef not lamb - think the Americans got that confused!!! :D)

Anyway, this sounds disgusting (I think!), but tastes amazing. If you hate cauliflour like me, please give it a go. Not sure if I'm spelling Cauliflour right or not or if it's cauliflower (shows how often I've eaten it...never.)

  • 450g/1lb Cauli
  • 1 tbsp extra virgin olive oil
  • 1 onion
  • 2 cloves of garlic
  • 450g/1lb lean beef mince
  • 280g beans - I use canellini
  • 120ml beef stock
  • 2 tspn Worcester sauce
  • Salt and pepper
  • 2 tbsp low fat source cream or creme fraiche
  • 1 large egg
  • 60g low fat hard cheese
Method
Preheat oven to 180C/350F/Gas 4
Cook cauli in a pan of boiling water for 10 mins till tender.
Heat oil in frying pan and add onion and garlic.
Fry until onion is translucent.
Add beef until browned and broken up.
Add beans (can use tinned) and cook for 3 mins.
Add Worcester sauce, stock, salt and pepper.
Simmer for 5 mins.
Combine cauli, egg, creme fraiche/sour cream together and whisk.
Take two oven proof dishes and fill each with the meat mixture, then top with the cauli mixture.
Sprinkle with cheese.
Cook one for 20 mins and freeze the other if desired.
Serves 4.

Concerns
When I made this the meat mixture was quite watery. So I let it simmer for a little longer. You could add less stock to the stop this happening.
The cauli mixture looks really runny and sloppy, so not that easy to put onto the meat mixture - don't worry if it looks a mess! The cauli mixture sets more whilst cooking (probably because of the egg) and is the perfect consistency.
Tastes like normal Shepherd's Pie only nicer, trust me!
 
Creamy Fish Pie

Ingredients
  • 1 tbsp olive oil
  • 2 pieces white fish, any type
  • 2 tbsp sour cream, low fat
  • 1 onion
  • handful of chives
  • 30g reduced fat hard cheese
Method
Brown onion in a pan to give that fried onion flavour.
Cook fish in microwave and then flake it.
Mix onion, fish, sour cream, chives together.
Spread in an oven proof dish and cover with the cheese.
Season to flavour.
Cook for 10 mins in a medium oven or until cheese has turned golden.

Serve with green beans and roasted peppers and leeks to up the veg intake!
You can also add beans or peas to this to increase the protein.
 
Carrot Cake

Ditzeeblonde put me onto the muffin in a minute. Now on SBD you can only have 30g of flaxseed daily, but that's more than enough to make a muffin. It's a nice break from eggs for breakfast, or perfect to make and slice for a snack if you're at work.

Here's my take it on (tailored to be like carrot cake, my absolute favourite food in the world :D)



Ingredients
  • 30g flaxseed
  • 1/2 tspn baking powder
  • 1 tspn sugar substitute (Splenda)
  • 1 egg
  • Flavouring (I used lemon essence, which is mainly lemon flavoured oil (made by Silverspoon) and no sugar in it.
  • 1 tsp ginger powder
  • For the topping: 20g low fat cream cheese, 1/2 tspn sugar substitute, lemon essence
Method
Mix everything together in a microwaveable mug. Mixing with a spoon is fine!
Microwave for 1-1.5 minutes.
It will come away from the sides of the mug when ready.
Loosen from the mug and tip - it will easily drop out.
Slice into 3 pieces and spread with the topping.

Ooooh Liz, your recipes have definately hit a nerve tonight. I have a huge sweet craving at the moment. Need to go shopping though, have no flaxseed or ricotta....:(! Thanks very much. Will let you know how i get on. xx

South Beach is great for vegetarians! I find it weird when people think it's some Atkins-style low carb (which I think would be v hard for us veggies), when it's soo not.

I just made a great mushroom-flaxseed recipe, which I adapted from something else. Loads of veg with it too. I am way too full actually.

How are you finding SB? I am feeling really good on it. I didn't get lunch till 3.30 today and I didn't have a sugar low and had only just started to feel slightly hungry. That is not normal for me :D
 
Hey Marnie, whilst I'm still around on this board I've moved onto Cambridge Diet to shift this 2 stone.

I had loved the SBD but only lost 3 lbs in 2 weeks. I felt that it was a superb way to eat for life, but not something ideal for me in terms of losing weight and I was getting too depressed being over my ideal weight - plus none of my clothes fit and I can't afford more.

This 2 stone should be gone in around 6 weeks and then I'll be working up the programmes on CD, which encourage a low G.I. way of eating anyway. Then doing SBD for life I think. I like how it stabilises my mood and having been prone to depression and anxiety all my life it works well for that and means I don't have to take medication!

So please keep talking, adding recipes etc. Would love to hear the mushroom flax one, as I was using flax a fair bit. It's wonderful stuff.
 
Don't blame you for trying something different after only losing 3 pounds, I think I'd have cried! I know we're supposed to think slow and steady is best, but it's very hard to actually believe it when you're trying hard and not losing. I found that with weightwatchers, it just didn't work for me at all!

The mushroom one was basically just cook mushrooms, garlic and lemon juice in a casserole dish, add low-fat mozzarella and 2 tbsps of flax and put back in the oven until the cheese is melted. Yummy!
 
It is frustrating. Maybe some people are more suited to some diets than others. I would have panicked about coming off Cambridge, but now that I've found SBD I know that there is something I can do where I have foods that I like and I don't feel hungry.

That sounds delish - I love mushrooms and could happily have them at every meal.
