Totally Free Corn Salsa

I make literally TUBS AND TUBS of this because I love it and whenever my mouth needs distracting it's free and tastes really fresh and goes with plenty of things. I actually stole it from a friend, it's her 'go to dish' to take to parties and bbqs haha

You Need:

1 Red Onion
1 Pepper - I prefer Red
1 large tin of sweetcorn or 2 stripped cobs
2 Tomatoes
1 Red Chilli
Corriander
1 Lime
Salt and Pepper for seasoning

Directions:

- Cut the onion, pepper, tomato up small, to the size of sweetcorn kernals and add to a bowl with the drained tin of sweetcorn
- Finely chop the chilli and add to the bowl
- Roughly chop the corriander and add to the bowl
- Squeeze the juice of the lime over the mix
- Season with salt and pepper then mix thoroughluy


Notes:

- Chilli is optional and I sometimes leave it out. It still tastes fresh and great
- Always deseed the tomatoes before cutting
- Keeps really well in the fridge - mine lasts 5 days or so
- If you want to make a 'dip' type salsa just add a little pasata

This was fab- I actually added a chopped apple for its 2nd outing which also added a lovely sweet dimension.
