    Rich beef stew and celeriac mash

    Made this earlier, the recipe from the 'month of easy family meals' booklet that came with this month's SW magazine, and all I can say is 'wow'!!! I have never had celeriac mash before, and even before I added the flavourings I was hooked! Nutty, light, comforting, warm - omg, is it possible to be in love with a food item (well apart from cheese, natch!)

    The stew has tons of flavour too, though of course I'd prefer it thickened, but apart from that it was gorgeous. However the celeriac mash was a total revelation and may be one of the nicest things I've ever eaten

    anneski, an easy syn free way of thickening gravies is to add instant potato powder (Smash) to the stew, I often make nice thick gravy using a beef stock cube, vegetable water and Smash.

    I think you have to syn smash on a red day although not a 100% sure- could someone clarify?? I havnt done red before. :-)

    I am sure it would be synned on red the smash that is

    I sometimes cook some butternut squash up. liquidise it and add to stews as sort of 'thickens' it

    I love celeriac as chips too

    Ooh celeriac chips!! Umm... is there a recipe, perchance? I'm thinking it might be similar to the usual potato syn free chips? I shall search and see meanwhile, yum and thanks!

    just treat them like normal sw chips. There is a thread on here called 'superfree chips' Erm tried them first with spices on top, I am happy to eat them plain or with spices. I love them. Chips on a red day. I often do a mix of bns and celeriac chips on a red day, so delicious together. I do find they are better parboiled slightly or they can be a bit hard.

    Rich beef stew recipe (super simple) serves 4

    Beef stew freezeable, not mash (although I've frozen the mashed celeriac without the flavourings, so will see if that works or not!)

    Ready in about 1 hour 30 mins.

    Fry Light
    1lb 12oz/794g lean stewing beef, cut into chunks (I used skirt beef)
    2 garlic cloves, crushed
    12 shallots
    4 celery sticks, roughly chopped
    6 carrots, peeled and chopped into chunks
    11oz/312g chestnut mushrooms
    1&3/4 pint beef stock (994ml)
    salt & freshly ground black pepper
    A handful of fresh thyme leaves, finely chopped

    Preheat your oven to 180c/350F/gas 4. Spray a large frying pan with the frylight and place on a medium heat. Add the beef and stirfry until browned all over.
    Transfer the beef to a casserole dish with the above ingredients, season with the salt and pepper and add the thyme.
    Bring the mixture to the boil on the hob (I left it in the frying pan for this step as I don't have hob proof casseroles) and then cover tightly and cook in the oven for 1 hour, or until the beef is really tender.

    Meanwhile, make the mash...

    2 garlic cloves, crushed
    3lb, 6oz /1.5kg celeriac, peeled and cut into cubes
    5oz/142g fat free natural fromage frais
    a pinch of nutmeg
    a handful of fresh parsley, chopped, to garnish
    Steamed courgettes and brocolli to serve

    Boil the celeriac for 20 minutes, until tender. Drain well and return to the pan. Add the garlic, fromage frais and nutmeg. Season to taste and mash well.

    Garnish the beef stew with the parsley and serve with the mash and steamed courgettes and brocolli.

    Syns per serving - red and extra easy, free!
