A lady in my group mentioned having SW Cowboy Pie. I forgot to ask her for the recipe though before she left - does anyone know the recipe at all?
A lady in my group mentioned having SW Cowboy Pie. I forgot to ask her for the recipe though before she left - does anyone know the recipe at all?

It's in this months SW magazine.
I dont have it here as I'm at work, but not sure if we are allowed to copy out full recipes from the SW magazine due to copyright :s
Might be worth buying the magazine there are LOADS of recipes in it this month including a bonus mini book of takeaway recipes.
Thank you - I actually have the magazine at home but yet to read it haha!
It's absolutely delicious in a very light hearted and kiddie friendly way. I could seriously have eaten three times the amount. But I'd recommend trying to up the gravy in it a bit.

I keep being told to try it, need to work it into my meal plans this week, sounds lovely as a nice winter meal. The magazine this month is amazing, so many lovely recipes I want to try, already had the black bean sauce and the spicy chicken drumsticks twice. Going to do the drumsticks at our halloween party along with chilli topped sausages (low syn of course with a HEB bread roll) all served with salad and coleslaw. Don't even have to let people know its slimming world (well all except one friend who follows it as well)
But back on topic, I'm going to have a quick look through now and make sure we pick up the ingredients for the cowboy pie on Thursday when we go shopping

I was thinking about trying this myself, only with Quorn mince. I have heard it is really nice.
Fry Light
500g pack extra lean mince beef
6 spring onions, white bulb thinly sliced and green leaves finely chopped
500g pack fresh diced carrot and swede
415g can baked beans
300ml beef stock
2tbsp worcestershire sauce
1tsp dried mixed herbs
salt and pepper
2x107g packs instant mash potato cheddar and onion flavour
2 eggs, beaten
1) Place a pan sprayed with Fry Light over a medium heat.
Add the minced beef and stir fry for 3 minutes
Then add the white spring onions to the mince and stir fry for a further 2 minutes or until the meat is browned.
2) Add the carrot and swede, baked beans, beef stock, worcestershire sauce and
herbs, then season. Bring to the boil, cover, reduce the heat to medium-low and simmer for 40 minutes, stirring occasionally.
3) Preheat the grill to medium. Make the mash according to packet instructions.
Add the spring onion greens to the mash with half the egg and beat well. Divide
the mince mixture between 4 ovenproof pie dishes, then spoon over the mash. Roughen up the tops of the pies with a fork, then brush with the remaining egg.
4) Grill the pies for 3 minutes or until browned.
Serve with vegetables.
I tried this one the other day. It was so gorgeous i had it twice in two days!! Most unlike me. Really nice, warm dinner
I had the cowboy pie tonight and was a bit dubious before try as to whether I would like it or not...IT WAS GORGEOUS!! perfect stodgy comfort food for a cold winters night....got loads left for tomorrow night as well :-)
Ally xx
I've had this several times and it's so good. My husband loves it and you'd never in a million years believe it's a "slimming" recipe.
You don't need to use smash, you can use standard mash. However, I hate instant mash normally but the smash cheese and onion flavour one is lovely.
Lost track of the weeks now but I'm now at 3st 13lb
I made Cow Pie last night and left overs tonight. I made this with diced chicken as I do to like mince.
