Syn Free Shepherd's Pie

I have a recipe I thought of myself and it is just great for these cold winter months, my husband absolutely adores it and looked for second helpings last night when I made one. Anyone who doesn't know what shepherds pie is, it is basically mince, vegetables and potato in a pie. Depending on the size of a dish, I would have a large rectangular deep shaped dish and I use a lot of potatoes.

Ingredients
6-8 medium potatoes
any amount of vegetables, I use carrots, parsnips and turnip
1 Ib of less than 5% fat mince (I use the round steak mince - expensive but this dish will last a few days)
2 rich beef Knorr stock pot
1 medium onion
small amount of skimmed milk and salt
to decorate on top: frylite spray oil and paprika

Method
1. Boil the mince in water and chop onion and cook with mince (gives a lovely flavour to the mince), boil fully and once cooked through then drain most of the water but not all. Put the two stock pots in the mince and let melt. Place this on the bottom of the dish and spread evenly covering all areas of dish.
2. Boil the potatoes and vegetables separately and drain fully. Place first the vegetables over the mince and then mash potatoes with skimmed milk and salt and place on top of the vegetables.
3. Spray frylite over potatoes and paprika, frylite gives a lovely crispy coating on top of pie
4. Cook in oven for 30 minutes at 200 C. Let cool down and serve as this dish can be very hot

sounds absolutely delicious. I like the frylight and paprika idea!

I bought potatoes this evening so think I will be making myself a veggie version tomorrow!
 
It is lovely and hubby who isn't on in Slimming World absolutely adores it, so much so that he asks me when I'm making my next shepherds pie (of course he asks for himself, not for me that needs to lose more weight).

If you are going to do the veggie one then I would use mainly SS foods, carrots and parsnips are lovely and sometimes I like a tin of beans in it (yes trust me they are gorgeous) but I don't add that to mine as himself is not gone on baked beans in a shepherds pie but then again I could add the beans on the side. I think you need to have a lot more veggie and potatoes though to fill the dish and some kind of meat substitute like quorn, it definitely bulks it up a bit

In the baked beans went and low and behold it was DELICIOUS!!! Enough for 6 generous portions (3 are already in the freezer) also used veggie mince and put an egg in the mashed potato (read it on minimins somewhere). Wish I had remembered to fry-light the top though!

Your welcome Kimberley, that looks delicious, gosh Im hungry now. I put the paprika on top to take away from the white look of the potatotes but definitely the frylite gives it the crunch you need when the weather is cold and miserable outside yum yum
 
Depending on the dish you use this would serve about 6 people
