Veggie Burger Recipe?

Hi, has anyone got a good veggie burger recipe please? I've tried various in the past but they always end up either soggy or they break up.

[FONT=&amp]Sweet Potato Burger[/FONT]
[FONT=&amp]3-4 patties[/FONT]
[FONT=&amp]Ingredients[/FONT]

  • [FONT=&amp]1 sweet potato, baked and peeled[/FONT]
  • [FONT=&amp]1 can of white beans, drained and rinsed (or fresh cooked beans if you’re off the cans)[/FONT]
  • [FONT=&amp]2 tablespoons diced red onion[/FONT]
  • [FONT=&amp]1 handful of parsley, chopped[/FONT]
  • [FONT=&amp]1 teaspoon mustard[/FONT]
  • [FONT=&amp]1/2 teaspoon garlic powder[/FONT]
  • [FONT=&amp]Salt and pepper to taste[/FONT]
  • [FONT=&amp]Frylight or tsp oil.[/FONT]
[FONT=&amp]Directions[/FONT]
[FONT=&amp]Put all ingredients in a large bowl and mash with the back of a fork until the white beans have broken down and everything is evenly combined[/FONT] -- basic recipe then you can add any other spices you want.

[FONT=&amp]Cook in a pan or put in oven when other things are in there.

BEAN BURGERS – made with rice and beans
100GMS RICE
100GMS ONIONS
400GM TIN KIDNEY BEANS or MIXED BEANS - DRAINED
1 CLOVE GARLIC - CRUSHED
1 TBSP TOMATO CHUTNEY
2 TSP TOMATO PASTE
1 TSP HARISA PASTE - SALT AND PEPPER

Cook the rice and the onions.
Mash the beans with garlic, harissa paste, chutney, tomato paste and salt and pepper.
Add the rice and the onions and mix well.
Form into 4 burgers and put into the fridge for an hour or more.
You can grill them or put them in the oven to crisp and brown.

I didn't have any harissa paste so I put some cumin, coriander and chilli powder in them.
Cooked the rice and onions in the microwave
I synned the chutney - 2 per tablespoon

I have some with vegetables in them :D but just going to have my lunch so will look later.

Don't know why the smilie came at the beginning.
 
Veggie Burgers with Veg.

VEGGIE BURGERS

200GMS COOKED POTATOES - MASHED
150 GMS COOKED CAULIFLOWER
HALF of COOKED GREEN PEPPER
60 GMS COOKED PEAS
100GMS FINELY CHOPPED RAW MUSHROOMS
20GMS OF CHOPPED ONION
GARLIC/GINGER PASTE
USE SPICES OF CHOICE (if you want any)
SPRAY OIL

METHOD

Spray the pan and put in the onion and stir-fry until brown. Add the garlic/ginger paste and spice mix and cook for a couple of minutes. Put in the mushrooms and cook until they are dry then add them to the mashed potato.
Finley chop the veg or put in a processor and chop them then add to the mix.
It is now ready to make into burgers or whatever shape you want. It can be re-heated in the oven or in a pan. You can use any veg you want not the ones as above and make them spicy or not.
Love these on toast.

Now when I cook onions I chop them finely and put them in a microwave dish and just cover them with water and add a stock cube. Cook for about 5 mins until onion is soft and most of the liquid has gone.

Don't forget to syn the breadcrumbs and any oil you use. I always use oil either spoon or spray oil (and not Fryllite)

These are the basic recipes and you can add any veg you want to them.

CHICKPEA BURGERS


  • [FONT=&amp]400g can chickpeas, drained[/FONT]
  • [FONT=&amp]zest 1 lemon, plus juice ½[/FONT]
  • [FONT=&amp]1 tsp ground cumin[/FONT]
  • [FONT=&amp]small bunch coriander, chopped[/FONT]
  • [FONT=&amp]1 egg[/FONT]
  • [FONT=&amp]100g fresh breadcrumbs[/FONT]
  • [FONT=&amp]1/2 medium red onion - diced[/FONT]
  • [FONT=&amp]1 tsp oil or Frylite[/FONT]


  • [FONT=&amp]In a food processor, whizz the chickpeas, lemon zest, lemon juice, cumin, half the coriander, the egg and some seasoning. Scrape into a bowl and mix with 80g of the breadcrumbs and the diced onions. Form 4 burgers, press remaining breadcrumbs onto both sides and chill for at least 10 mins.[/FONT]
Heat oil or Frylite and cook the burgers on both sides for about 4 mins until they are golden brown or put them in the oven when you have something else in there.


CHICKPEA BURGERS 2




  • [FONT=&amp]2 tsp olive oil[/FONT]
  • [FONT=&amp]250g mushrooms, finely chopped[/FONT]
  • [FONT=&amp]2 garlic cloves, crushed[/FONT]
  • [FONT=&amp]1 bunch spring onions, sliced[/FONT]
  • [FONT=&amp]1 tbsp medium curry powder[/FONT]
  • [FONT=&amp]zest and juice ½ lemon[/FONT]
  • [FONT=&amp]400g can chickpeas, rinsed and drained[/FONT]
  • [FONT=&amp]85g fresh wholemeal breadcrumbs[/FONT]
  • [FONT=&amp]1 egg[/FONT]


  • [FONT=&amp]Heat 1 tsp oil in a non-stick frying pan and cook the mushroom, garlic and spring onion for 5 mins. Mix in the curry powder, lemon zest and juice and cook for 2 mins or until mixture looks quite dry. [/FONT]
  • [FONT=&amp]Put ingredients in a food processor along with the chickpeas leaving a few chunky pieces then shape into 4 patties. Fry in the remaining oil for 3-4 mins on each side until crisp and browned.or again put them in the oven when you have something else in it.[/FONT]

No problem - the lentil burger is on a photograph page and having difficulty putting it on this laptop. Will try later. Good Luck and let me know how you go.
