Scan Bran ideas please!

Hi there, I started SW last week and this week I bought Scan Bran! I'm not really sure what to do with it however, so would be very grateful for ideas! Someone mentioned making a chocolate cake! Does anyone have the recipe or are there other adventurous things to use it in (low in syns if poss!) ThanksX

Diet: Slimming World

Christmas bran cake
Syns for the whole cake:
8½ Syns, or 6 Syns + 1 Healthy Extra ‘b’ choice
You will need:
5 Scan Bran
2 beaten eggs
1 tbsp golden syrup
2 level tbsp mincemeat
5 level tbsp sweetener (or to taste)
1½ tsp mixed spice
grated zest of a lemon for extra zing (optional)

Method:
Soak the Scan Bran in boiling water to soften. Then drain and mash.
Mix all the ingredients together thoroughly.
Pour the mixture into a microwavable bowl and microwave for around 6 minutes. When cooked the cake will be springy to the touch and will have pulled away from the side.
Chef’s tip: Top with quark flavoured with brandy essence for a cold dessert. For a hot pud, enjoy with low fat custard
(1 Syn per 2 level tbsp) or very low fat fromage frais/Müllerlight yogurt for Free!

Carrot Cake
Syns for the whole cake: 12½ delicious Syns, or 7 Syns + 1 Healthy Extra ‘b’ choice
You will need:
4 Scan Bran-crushed
1 Weetabix, crushed
5oz grated carrot
½ teaspoon nutmeg
1 level tbsp runny honey
2 level tbsp mincemeat
3 beaten eggs
For the topping:
1 tub quark
Lemon juice
Sweetener to taste

Method:
Preheat oven to gas mark 4, 180°C/ 350°F
Mix all the ingredients together.
Transfer the mix into a baking tin lined with non-stick baking parchment and bake for 1 hour.
When cooked turn onto a wire rack to cool.
For the topping mix the quark with lemon juice and sweetener to taste and spread onto the cake once cooled

Low-Syn chocolate cake
Syns for the whole cake:
9 yummy Syns or 6½ Syns + 1 Healthy Extra ‘b’ choice
You will need:
5 Scan Bran
3 beaten eggs
1 level tbsp golden syrup
1oz cocoa powder
½ mug sweetener

Method:
Soak the Scan Bran in boiling water to soften. Then drain and mash.
Mix all the ingredients together and pour into a microwavable bowl.
Microwave on high for 7 minutes. When cooked the cake will be springy to the touch and will have pulled away from the side.
For a free topping, pile with (defrosted) frozen forest fruits or, for extra Syns, top with chocolate spread.

FERRERO ROCHER
might be delicious but we've come up with a great solution to fix that chocolate craving for less than one third of the Syns! (Which means you can eat lots more without breaking the bank!)

Crush 5 scan bran with a rolling pin, add 4 tablespoons of Nutella that has been warmed for 20 seconds in the microwave. Stir well and then roll into little balls- leave in the fridge to set.
16 balls = 1 syn each-- heaven!

OATBRAN CAKE

5 oatbran
I mullerlight—toffee works well
2 eggs
quarter tspn baking powder
5tbsp sweetener
1 tsp cinnamon

cover the oatbran with hot water to soften, then mash
mix yog, eggs, baking powder, cinnamon & sweetener together, then mix in oatbran
put in microwaveable dish & cook on high for 7mins (900 watt) or until cake shrinks from the sides of the dish
leave to cool
cook a little further in the dish & then serve

3syns for the whole cake

BANANA CAKE
1 healthy b plus 8 syns, or 14 syns for the whole cake

1 large banana (4 syns because you are cooking it)
4 oatbran
1weetabix
3eggs
1tbsp runny honey (3syns)
1 dsrtspn marmalade (1 syn)
1tsp ginger, nutmeg & cinnamon

blend all ingredients together & pour into lined tin
cook for 20-25 mins at 180 degrees

Chocolate fudge cake
Syns: 12 Syns for the whole cake! (Freezable)
You will need:
5 Scan brans broken into small pieces
1oz sieved icing sugar
2 level tbsp golden syrup
4 tbsp Canderel
2 beaten eggs
1 tub quark

Method:

1. Soak the Scan bran in a little hot water until soft. Add the rest of the ingredients and mix well.
2. Place in a parchment lined loaf tin and bake 190C for 30 – 35 minutes.

Ginger cake

Syns: 10½ syns whole cake!
You will need:
5 Scan Bran
2 level tbsp black treacle
2 level tbsp golden syrup
3 – 4 tbsp syn free sweetener
2 beaten eggs
2 tsp ground ginger

Method:

1. Break Scan Bran into small pieces and soak in warm water until soft but not soggy. Combine the rest of the ingredients and mix well. Add Scan Bran and combine, reducing any large lumps. Place in a microwavable dish and cook for approximately 3 – 4 minutes. Check half way through.
2. Serve hot with virtually fat free fromage frais or leave until cold and cut into slices.

Scotch eggs!
4 hard boiled eggs
8 morrisons eat smart pork sausages
2 oatbran crushed

take the skin from the sausages and mould one or two per egg around each egg, depending how you get on moulding them, you then roll the balls in outbran so its like breadcrumbs and cook in the oven gas 6 for half an hour until cooked.

i found you only need 1/2 oatbran per egg so that would be 1/4 syn

Cheese & Onion Scan Bran Burgers
Syns: 7 for all 3 burgers!
You will need:
3 Scan Bran
Hot Water
2 Eggs
1 Bunch Spring Onions
42g Reduced Fat Cheddar
Soy Sauce
Seasoning
Fry Light

Method:

1. Crumble the Scan Bran, add hot water and allow to cool. Beat the eggs and add a good sprinkling of soy sauce plus the seasoning. Mix the egg mixture with the Scan Bran. Finely chop the onions and add to the Scan Bran. Grate the cheese and add to the Scan Bran. Allow to stand for 15 minutes.
2. Shape into thin burgers (makes 3 quite large burgers) and fry in Fry Light until golden on both sides.

They are best served with Baked Beans or Mushy Peas

Onion bhajis
Syns: 6½ syns for all the bhajis on Green or Extra Easy (or just 2½ Syns without the fennel seeds)
You will need:
1 large potato
1 large onion
2 cloves Garlic
5 Scan Bran (Healthy extra ‘B’)
3 tblspn curry powder
1/3 cup hot water
1 egg
1 tspn turmeric
Seasoning
1 tblspn fennel seeds (optional)

Method:

1. Crumble the Scan Bran until it resembles breadcrumbs. Add the water and egg and soak for 10 minutes. Peel and grate the potatoes. Peel and chop the onions and garlic. Mix with the Scan Bran. Add the curry powder, turmeric & seasoning. Shape into bhajis.
2. Fry in fry lite until cooked.

Pizza
Syns:
12 Syns for the whole pizza!

Method:

1. Soak 4 Scan Bran in a little hot chicken stock. When the stock has soaked in and the Scan Brans are soft, mash. Form the Scan mash into a pizza shape on a baking tray covered in baking parchment . Cook in a medium oven until crisp. Place ½ tin of Napolina chopped tomatoes in thick sauce in a microwave dish along with half an onion finely sliced, a crushed garlic clove and half a tsp of syn free sweetener. Cook on medium heat until the sauce is thickened. Finely grate 28g cheddar cheese and mix into at least 3 tbsp Quark. Add ¼ tsp Colman’s mustard powder and a couple of shakes of Knorr Aromat or Schwartz season all. Mix well and leave to stand to allow the quark to absorb all of the flavours. Pile the tomato sauce mixture onto the crisp base and blob cheese mixture over.
2. Heat in a hot oven until the cheese has browned.

Quorn mince & Scan Bran loaf
Syns: 3 Syns for the whole loaf!
You will need:
1 Pack Quorn Mince
5 Scan Bran (Healthy extra B)
1 Large Onion
2 Cloves Garlic
6oz mushrooms
1 Jar Passata
2 eggs
¼ pint chicken Bovril or vegetable stock (stock cubes contain Syns)
1 tbsp Worcester Sauce
1 tsp mustard (1/2 syn)
1 tsp mixed dried herbs
Salt & Pepper
Hot Water

Method:

1. Crumble the Scan Bran and soak in enough hot water to moisten them. Leave for 10 minutes. Finely chop the onions and the garlic. Chop the mushrooms. Add the onions, garlic, mushrooms and Scan Bran to the Quorn mince. Beat the eggs and add to the mixture. Add the Passata, Bovril, Worcester Sauce, Mustard, herbs, salt and pepper.
2. Mix together and place in an oven proof dish, cook at Gas Mark 5, 200 degrees C - until golden and firm to the touch.

Top 10 toppings
Top each biscuit with 1 laughing cow cheese and 1 teaspoon of lemon curd (½ Syn each)

Mix a tub of quark with stilton from allowance and leave in fridge overnight - the whole tub is then 6 Syns or 1 Healthy Extra

Soften 2 Scan Bran with a spot of boiling water, add milk from your allowance, microwave for 50 seconds and add granulated sweetener - perfect start to the day!!!

Top with...
Cheddar cheese and bacon
Bacon and banana (don't knock it until you've tried it!)
Bacon and melted stilton
Tuna mixed with very low fat mayo and spring onion
Cottage cheese
Quorn sausage and tomato
Laughing Cow cheese, ham and tomato
Houmous (tin of chick peas, 3 cloves garlic, 8tbsp reduced fat fromage frais or nat yoghurt, salt n pepper—whizz up in blender & serve—free on green)
Salsa dip (tin toms, peppers, onions, chilli flakes)
