Homemade chicken soup free or syns?

I make this weekly but now that I am about to start slimming world I was wondering if I can still eat this. I boil a whole chicken with skin in water with a cup or carrots a cup of celery and a cup of onions. After an hour I remove the chicken, remove the skin and add vermiceli to the water. I cut up the chicken into little pieces and add it back to the soup. What do you think? I don't actually eat the skin but obviously the water has fat from the skin. Please don't tell me I have to give it up I love it!!
 
You could let the soup go cold then skim the fat off the top.
