Granola, granola, granola. Big chunks of crunchy clustery granola!!!
my absolute favorite thing in the world. I've been known to have it for dinner because it's so satisfying after a long day.
I've been craving granola for a while now, but haven't really been buying it because hate how sickeningly sweet some of them are. I decided to try making my own, and it turned out wonderfully. I hope I have calculated the syn values correctly (please feel free to let me know if they're not!)

Home Made Granola – serves 10
without added extras: 1/2 HEb and 1 syn
180g oats (5 syns)
50ml agave syrup (10syns)
1 tbsp vanilla extract
1/2 tsp cinnamon
½ tsp nutmeg
½ tsp salt
1 tbsp oil (1 HEb)
1 egg white beaten until foamy (instead of oil)
Optional extras - must include syn value or add to HEb allowance
20 cashews (HEb or 25g 7.5syns)
10 almonds (HEb or 25g 7.5syns)
4 tsp flax (1 HEB)
25g cocoa powder (4 syns)
1) Spray baking tray with Frylight and set aside
2) Mix together oats, optional extras (if using), cinnamon, nutmeg and salt
3) Add agave, vanilla extract, oil and/or whisked egg
4) Stir well to make sure everything is evenly coated.
5) Spread mix onto baking tray. Bake for 30-45 minutes at 150c, stirring every 10 minutes to allow for even cooking
6) Allow to cool completely before removing and breaking up
N.B if you want bigger clusters, do not stir mix, but turn whole tray around in oven for even cooking
