I was browsing the Rosemary Conley recipe pages looking for suitable Slimming World recipes and I found this one:
Moroccan Pork Casserole – changed slightly to suit Slimming World
Serves 2 - Total Syns on Red: HEB x 2 (1 each) or 13 syns
Ingredients
• 1 large onion, finely diced
• 2 garlic cloves, crushed
• 400g very lean diced pork
• 1 tsp coriander seeds
• 1 tsp ground ginger
• 1 tsp smoked paprika
• 125ml water
• 1 stock cube crumbled
• 142g dried apricots (HEB = 71g)
• 1 x 400g can chopped tomatoes
• salt and black pepper
Cooking Instructions
1. Fry the onion and garlic in Fry Light until soft. Add the pork and spices, continue to cook sealing the meat on all sides. Then transfer to slow cooker. Heat the stock, herbs, apricots and tomatoes in the frying pan and add to slow cooker.
2. Cook on low for 4-6 hours until the pork is tender.
3. Serve hot with couscous or potatoes (if on Extra Easy) or additional vegetables.
