Hi!
Taking some inspiration from the slimming world peeps I am starting a thread for us to post pictures of our meals/food in. So that we can actually see what everyone else is having and find some new tasty things to make to keep us on track!

Feel free to post!

Here are mine from yesterday

BBQ turkey lasagne:

4.5 points per 1/4.

Flourless Chewy Chocolate cake:

2 points for 8th, 4.5 for quarter. (Everything else extra!)

6 large eggs seperated
1/2 cup of splenda (or other sweetener)
2 oz of cocoa powder (be sure to use real cocoa powder and not drinking chocolate etc)

Method
Preheat oven to 180c or 350f, spray a oven proof cake tin with non stick spray
Whisk the egg whites to the soft peak stage and set aside.
Then place the egg yolks in another mixing bowl and whisk until they start to thicken, then add the splenda and continue to whisk, but be careful not to let the yolk mixture get too thick. Add the cocoa powder into the egg yolk mixture and if it starts to get too stiff, add a little of the egg white mixture.
Carefully fold in the egg whites into the chocolate mixture and then pour the mixture into the cake tin.
Bake the cake for approx 25 minutes until springy.
Remove it from the oven but leave it in the cake tin to cool

Quick King prawn curry with mushroom and coriander rice

for Curry
dry fry an onion add
1 tsp garam masala
1 tsp coriander
2 tsp medium curry powder
1 Clove of garlic crushed
and 1 deseeded red chilli
large tin of tomato plus water
simmer untill sauce is thick
add 2 tbs of defrosted peas
and a packet of king prawn

Ps also added some already steamed carrot to mine

I wish I'd took photo's of my stuffed mushrooms from last night now! It was only 6.5 points but so yummy and filling. Will post it next time I make it. meanwhile I'll just lurk around and drool at other people's!:drool:

Hunters chicken, 4.5 points.

Hunters chicken and sweet potato chips

BBQ sauce recipe

you will need
1 onion, peeled and roughly chopped
1 tsp mild chilli powder
227ml/8fl oz passata
3 tbsp artifical sweetner
4 tbsp balsamaic vinegar
1 tbsp worchestershire sauce
1/2 tsp mustard powder
salt and freshly ground blacke pepper.

"balslmic vingar and worchestershire sauce provide the basis for this great tasting bbq sauce thsat is perfect for a dip, basting a chicken thighs or vegetable kebabs before a bbq, lady who gave me this recipe said she has them on spare ribs and cooks them in the oven so she has bbq spare ribs."

spray a pan with fry light and saute the onion and chilli powder over a low heat for 5 minutes until softened.

stir in the remaining ingrredients, bring to the boil and simmer for 10 minutes untill thickened. check the seasoning before serving hot or cold.


I use some extra passata as i like it less tangy.

Chicken breast wrapped in bacon (i used turkey rashers as lower points) add some light mozzerella under the bacon, top with the 0 point bbq sauce (same as used in my lasagne) and top with cheese.
I used a babybell light under the bacon instead as its what i had. but you could use any cheese you want, so long as you point it! 180c 30-35 min.

cut the potato thin, par boil until tender, drain, shake to roughen, dry with kitchen towel, preheated tray and frylight!!!!! 20 mins ish.
 
right oh thanks, i didnt blot mine with a kitchen towel maybe thats the reason for the floppyness
 
mine was a rooky mistake... never done it before :(
 
Dont worry, its all trial and error, you will figure out how to do them to how you like them after a few goes :)
