Hi all

So after being quite sick over the summer I went AWOL and put on a stone!!! I was on a cocktail of steroid which didn't help but I'm back on track weighing in at 15st 9.5lbs I'm the blue corner lol
Up until this point I always compared my current weigght to what I got down to in 2012, I was already setting myself up to fail that way. My mind set is totally different this time round

So far so good!!

Wanted to share a yummy recipe I just worked on.

Made small Apple strudels 4pp for TWO of these. Part of my September challenge is to make my own snacks instead of store bought junk, and include fruit in every sweet snack.

One sheet makes two strudels

Recipe is as follows:
1 just rol filo pastry sheet cut into eight equal squares. (1 sheet 3pp)
Apple diced mixed with sweetener and cinnamon (0pp)
Small amount milk for top and between sheets (1pp)
Stack four squares on top of each other with a small bit of milk rubbed on each sheet
Place some Apple on one side of squares stacked, fold rub top with small bit of milk and sprinkle with cinnamon and sweetener mixed.

30mins in 180 preheated oven.

Voila!!!

Yesterday I made veggie cheese free pizzas the day before I made a Moroccan chicken and apricot dish

Delighted with myself haha

Sliced Turkey and sweet chilli Salad 5pp

Homemade chicken coconut curry 12pp

Nescafe cappuccino unsweetened 1pp

Homemade Chicken Curry
Chicken breast
Half can light coconut milk
150g sweet potato skinned and diced
6 mushrooms
2 carrots
1 onion
Mild curry powder, turmeric, garam masala, chinese five spice, chilli flakes, cumin, salt and pepper.

Use 1 cal spray 9x times and throw all spices in with it at bottom of pan. Mix around and cook lightly for 1min then add coconut milk. Gradually increase heat and simmer gently. In separate pan dry fry onion then add all veg to coconut milk. Simmer on med high heat for 10 mins. Add diced chicken breast and simmer on med heat for a further 20mins or until sweet potato is soft and chicken is fully cooked. Sauce will thicken throughout cooking process

And you're ready to go

Chicken, peppers, onions, garlic seasoned with cumin salt pepper and half a tin tomatoes.
Added lettuce tomato and light mayo on two ww wraps

So started weight watchers properly on Monday, I've lost 1lb since then happy days!
It's not much it I'm happy out with it
