Blueberry Drop Scones

hey, just wondering if anyone has tried these - our leader brought them in today and they looked fab, think I'll give them a go this weekend. Only 2 points per scone - more like a pancake really :D

Of course!


Whole recipe 13 PP

100g self-raising flour
1 medium egg, lightly beaten
2 teaspoons Splenda
100ml skimmed milk
Handful of blueberries
Ten sprays of spray oil

Mix flour, Splenda and egg together without over beating, then add milk bit by bit until its the consistency of thick cream.

Mist the frying pan with half the spray oil for the first batch, drop spoonfuls of batter into the pan. Add a few blackberries on top of each blob, cook for 2-3 minutes then turn and cook other side.

Spray the rest of the oil on the pan and cook the rest.

Usually makes 7 2PP each.

I'm going to try them this weekend!

Just made these (pointed for half as shared with Son) and they were yummy! Served blueberries extra as DS doesn't always like them. Added 1 tsp treacle to drizzle OMG!

Would be great with nectarine or banana I think!

Made these again this morning. Really yummy! Increased flour to 120g and milk to 125ml and got 12 largish pancakes out of that. Pointed it at 15. We each had 4 pancakes (3 of us) so 5 points (plus a point for a tiny drizzle of treacle) for brekkie.

There should be an option called attachments when you're replying on your phone hon?
I made these today but only got 5 pancakes out of the mix so I would increase the mix too (about the size of a regular american pancake) ;) x

Here they are. I used a tablespoon to drop the mix into the pan so they cooked a little quicker and not so much cutting up required for my 5 year old. Needn't have bothered, he nearly stuffed them in sideways! Lol

They look great! I haven't had a chance to make them yet but this weekend I will definitely give them a go - can't wait yummy :eat:
 
I might add an extra tsp sweetner to mine next time... or double the mix and make enough for everyone in the family. Think I might just make them plain and serve raspberries/strawberries/blueberries on the side with choice of honey/maple syrup heehee. YUM! x
 
Thanks! :) Just make sure you watch them though - no walking away during cooking! If you pop them in a lidded pyrex dish they stay quite warm while cooking the rest.

Finally got around to making these, like you Ukgal, I kept the fruit separate. Also added a little honey over the top - yummy
