    things to do with beetroot...

    Hi, I have some fresh beetroot in the fridge and other than put in a salad I don't know what else to do with it..... Any ideas would be appreciated x

    Sad I know, but I only like pickled beetroot. A beetroot sandwich (Blast from a childhood that allowed me to spend days out of the house with a bag full of strange concoctions and boiled eggs etc) , this can be improved on with fishfingers lol

    My veggie friend once served me a magnificent beetroot and potato curry. I thought it was going to be rank as I'd never eaten beetroot in salads and the dish was bright pink but it was devine!
    Without being able to give you ingredients or times it sort of involves tinned tomatoes, some potatoes and your beetroot and boiling for some time, with garlic onions that sort of thing. And to serve, we had a few slices of halloumi. Now PP wise that probably far outweighs rice, but my god its good.
