Dairy Free Cupcakes- 3pp per cake
I've just tried a recipe for dairy free cupcpakes, and it comes out to 3pp a cake with no icing, or about 4pp a cake with icing.
250g caster sugar
250g pure sunflower or another dairy free spread
1 tsp vanilla extract
290g SR flour
145ml lactofree milk or soya milk
180c 15 minutes
Beat the caster sugar and dairy free spread until pale and fluffy. Add the eggs 1 at a time, beating after each one. Add the vanilla extract and mix in. Sift in the flour and mix with a spatula. Add the lactofree milk or soya milk and mix well. Spoon into the cupcake cases filling 2/3rds of the way.
Cook on the middle shelf of a pre heated oven at 180c for 15 mins.
