    Pepsi Max Chicken (or diet coke, or diet pepsi....)

    Well, what can I say. Yum.

    Cook the chicken and veg (i used onions, peppers and mushrooms) in a pan. In a jug, mix 330ml pepsi max (tbh for my small 110g portion of chicken (3pp), this was too much i think so alter accordingly) and 6tbsp passata, a splash of worcestershire sauce. Add to the chicken and veg, and bring to the boil. Add some spices (garlic, all season spice, salt and pepper). Allow to simmer until liquid is reduced, continue to stir.

    I had mine with 50g medium blue dragon noodles (5pp) but next time i think i'll have 0pp BNS fries and mixed veg, or could have it in a pitta (3pp). So many options!

    It is so nice and easy (i'm such a rubbish cook!!!) would highly recommend!

    Pete’s Diet Coke Chicken

    Ingredients


    Chicken breasts
    1 Onion, chopped
    330ml diet coke
    100ml passata
    1tsp chinese 5 spice
    1/2tsp “very lazy”garlic
    1/2 tbsp soy sauce
    1/2 Tbsp Worcestershire sauce


    Method

    Fry the onion in Fry Light until soft, add chicken and brown off, add the rest of the ingredients and bring to the boil reduce heat a little and rapidly simmer until sauce thickens - NO LID but keep stirring.
    served on a bed of rice with veg.
