    Recipes from my Leader

    Got a few recipes from my Leader today mostly soups and one curry for anyone that wants them.

    They are all 0pp per serving

    Carrot and Coriander Soup
    Low Fat Cooking Spray
    Large Onion
    1kg Carrots, peeled and chopped
    1.2litres vegetable stock
    Large bunch fresh chopped coriander
    Salt and Pepper

    Stir fry onion in LF cooking spray for 5 minutes. Add carrots, stock and seasoning and simmer for 15 minutes until carrots are tender. Add coriander, liqidise and serve.

    Basic Vegetable Soup
    3 carrots, peeled and chopped
    1 onion, peeled and chopped
    1 courgette, chopped
    Tin of Tomatoes (Optional)
    I stock cube

    Put all veg and tomatoes into saucepan. Add stock cube and enough water to cover veg. Bring to boil and simmer for 10-15 minutes until carrots are soft. Blend, add more water if necessary to get the consistency you like.

    Broccoli and Caulfilower Soup
    1/2 head of cauliflower, broken into florets
    1/2 head broccoli, borken into florets
    1 onion chopped
    1 chicken or veg stock cube

    Put all veg into large saucepan, add stock cube and add enough water to cover veg. Bring to boil and simmer for 10-15 minutes until veg are tender. Liquidise or blend soup until smooth. Add more water if necessary to get the consistency you like

    Chilli Red Pepper and Squash Soup
    1 Large Onion, chopped
    2 Red Peppers, Deseeded and chopped
    1 Medium butternut squash, peeled, deseeded and chopped
    1 fresh red chilli, deseeded and chopped
    2 pints vegetable stock
    Freshly ground black pepper
    Coriander sprigs to garnish

    Put onion, peppers, squash, chilli and veg stock into a saucepan, bring to boil partially cover and reduce the heat and continue cooking for 25-30 minutes. Blend or puree the soup until smooth, season to taste and garnish with coriander sprigs

    Vegetable Curry (serves 4)
    Onion, finely chopped
    tablespoon curry powder
    Garlic clove crushed
    Low fat cooking spray
    100g Cauliflower florets
    2 carrots sliced
    Courgette sliced
    100g mushrooms sliced
    Red pepper chopped
    100g broccoli
    Tin of tomatoes
    500ml Vegetable stock
    tbsp tomato puree
    Salt and pepper

    Saute onions, garlic and curry powder in low fat cooking spray for 3 minutes. Add carrots and cauliflower and cook for a further 3 minutes. Add the remaining ingredients, bring to the boil and simmer for 20 minutes until all the veg are tender. Season to taste
