I don't know about everyone else but most of my meals need to come in at less than 6 points. I thought it might be a nice idea to have somewhere to post any good ones so feel free to pop any you have tried in here (please remember to point it up :D).
 
Pancakes

Makes about 8 (50ml each) which is 2.5 points for 2.

112g plain flour
2 med eggs
210ml skimmed milk
90ml
LF Spray oil

Sift in the floor, whisk in the egg, gradually add the milk and water until you have a smooth batter. Spray the pan and then get it really hot then reduce to med heat. Tip 50ml of batter in per pancake. Spread out and cook until the top is dry and the underside is browned. Flip over and repeat. Serve and eat straight away.

I top with sauteed apple for an extra 0.5 or my absolute fave lemon and Splenda mmmmm! I've even had them instead of wraps (which are about 2.5+ points each!) with a filling such as chicken fajita and they're gorgeous!
 
I'm a vegetarian, so I'm not sure how interesting any of mine will be! But my favourite when I need to have a meal which is big on taste but low on points is a vegetable casserole. This is how I make it, but it's one of those where you can use leftovers and what have you. The amounts are also based on how hungry you are! The only points in this meal are in the amount of potatoes you choose for the top.

You will need!

FL spray
swede
carrot
sprouts
onion
spinach
broccoli
1 tin tomatoes
1tbs tomato puree
2tbs soy sauce
handful of dried herbs (I use marjoram, rosemary, oregano, and basil)
1 stock cube dissolved in a half a pint of water
200g potato (which I think is completely ample!) (2pts)
Salt and pepper to taste (I think there's enough salt in it, what with the soy sauce and stock cube, but hey, it's your dinner!)

Firstly, fry off the onion with some FL spray until golden (it's best to use a saucepan so it saves the washing up). While that's cooking, chop all your vegetables into nice chunks (though you can make them quite small if you're in a hurry). When the onions are ready, add the veggies to the pot and let them caramelise a bit to release the flavours. Add your stock and scrape any bits off the bottom, then add the tomatoes, soy sauce, tomato puree and herbs, along with the pepper (and salt, if you fancy it). While that boils, chop your potato into small pieces and boil them in a separate pan. They might be done before the mixed veg but that's all good. Just before the veggies are done, preheat your grill to a high-ish heat. When the veggies are tender and the sauce looks a bit like a gravy, add them to a pyrex dish or any other oven proof dish, crush the potatoes a bit and add them to the top. Spray the potato with FL spray to make them crisp up and shove it under the grill until all is golden brown and well.

Ooh sounds lovely! I like veggie every now and then and I could totally meatify this anyway for only a few extra points.
 
Exactly! It could easily be a chicken casserole with meat and chicken stock. You could add sage to it too, which goes wicked with chicken. :)
 
This serves 2 and is a cheap hearty unusual meal - Works out at 4.5 points per bowl and i was stuffed!

Chilli Clam Pasta

Take one tin of top quality chopped tomatoes (0pts), one tin of tinned clams (john west)(2pts), a clove of garlic (chopped)(0pts), spinach (fresh or frozen)(0pts), chilli flakes(0pts), one rasher of bacon (fat removed very finely chopped)(1.5pts),.
Fry the garlic and bacon in a pan, add the chopped toms and chilli flakes and season to taste, simmer untill thick.
Boil 60g of pasta per person (3pts),. Once cooked drain. Add the clams and spinach to the tomato sace, heat untill boiling. add the pasta, stir and serve
you could always add extra veggies to spread futher.
 
I think I'll make that sauce, but without the clams! Sounds lovely :)

For a quick handy meal, i found the Weight Watchers Chicken Chow Mein steambag meal is only 3 points and is very nice. I had it for lunch yesterday with a dash of soy sauce. They are £2 in Asda.
 
Broccoli and Blue Cheese Soup

My Broccoli and Blue Cheese soup was delish. Really creamy and only a point a bowl! Yum!

Frylight
1 tsp oil (I used coconut - yum!)
A large head of broccoli (chopped up and stalk and florets separated)
a 200gish potato cubed
a large onion chopped
3 veg oxo cubes (you can reduce if you like) but I felt it needed it
boiling water
4 laughing cow light blue cheese triangles
spinach

Spray your pan well with frylight, add the oil and saute the broccoli stalks, onion and potato for about 5 mins until the onion softens. Crumble in the stock cubes and add enough boiling water just to cover the veg. Boil for 5 mins. Add the broccoli florets, top up the water to just cover the broccoli and boil for a further 5 mins. Check the potatoes are done and then reduce the heat. Add the 4 laughing cow triangles to the pot in small chunks and a generous handful of spinach. Blitz smooth and serve. I found it didn't need any further salt but you may like to add some pepper.

I had it with 1/4 par baked baguette.

Whole recipe is about 5.5 points and it makes about 5 bowls.

Soup sounds great will give it a go.

My fav 2 pt dinner is mushroom curry totally free with 100g of cooked rice (2)

My favourite recipe is 0 points.Spicy butternut squash soup,its lovely.
I just take a squash,cut it up,spray a baking tray with fry light and roast.Whilst it is roasting make up a vegetable stock cube,putting 1/2 TSP garlic granules, 1/2 TSP mustard powder,1 TSP of ground cumin. when squash is cooked put all ingredients into a blender :)
