Vegetarian work lunch ideas

Hi everyone,

I've just joined Weight Watchers today and I'm looking for inspiration for lunch ideas that I can take to work with me.

I'm vegetarian but I eat fish (no tuna though - not a fan!) and I don't like tomatoes (I know, annoying right!).

We have a microwave and toaster at work, but I'm hoping to just prepare something the night before that I can take to work with me.

I'm in bad habits with my lunch at work now, I just take a 'just add water' pasta pot and then load up on crisps, mini cheddars, pick 'n' mix cheeses and chocolate throughout the day.

I've just lost all imagination with food as I've become so reliant on ready-prepared stuff.

Please help! :sigh:

Glad I'm not the only one who doesn't like tomatoes......only like them when they are cooked.

I often go the veggie route to save some points.

I love wraps filled with cooked veggies like onion, mushroom and carrot with a few dods of philly. I do mines on a George Foreman at work but I imagine it would work quite well in a toaster bag.

pre cooked bake potatoes with quorn mince filling made into a chilli or spag bol sauce is great with a side salad.

pitta bread filled with salad , salmon and sweet chilli sauce would be nice too.

Homemade veggie soup wich could be made into zero points.

I always find the weeks I find myself preparing well is the weeks I am more likely to stick to my points allowance. Less tempted by the choccie biccies that way.
 
Hiya, I cook veg in the morning I usually take carrots leeks asparagus sometimes butternut squash and cook in a oxo or boullion and either 200g of baby new potatoes 4pp or a quorn Turk'y burger 2pp then heat it up, and a pink lady Apple and a hartleys 10cal jelly- the blackcurrant, raspberry and mango ones are veggie I emailed them :) u could take veg packs the Birdseye ones I take them in a rush or even cereal or reddie brek measure it out before work and take some skimmed milk maybe even bread or crumpets to have toast as a treat haha! I'm not sure on points of fish as I don't eat any meat/fish sorry but I'm sure u could take a prawn salad and pita breads or something like that :) be tricky if u don't have a fridge but could get one of them butty bags with the blue things in to keep them cold xx
