Why not boiling water to make soups?

Hi, please could someone advise why you can't make your soups with boiling water?

I don't really like them with warm water and find them so much more appetising when they have boiling water in them.

I boil the kettle then just let it stand for a few mins minutes and its still hot xx

My consultant said it takes the nutrients out of them. ?? I do the same boil the kettle and let it sit for a min and then pour
