Seaonsoned Pork Chops on a Bed of Leeks & Peppers

Another modified WW recipe.

This one uses something called "sage and apple seasoning", which I don't have so I don't know whether it's Dukan-friendly or not. If you can find any, you might like to check it out to see. Otherwise, you can just use dried sage instead as I did. Conso people can add some apple to the veg for their fruit ration.

The original recipe states to use 1 tbsp of flour, but I substitued 1 tsp of cornflour to make it better for Dukan. It doesn't cover the chops/steaks entirely, but adds enough flavour/seasoning to make the recipe work.

Serves 2

2 x 150g fully trimmed lean pork chops (I used loin steaks)
1 tsp cornflour
2 tsp dried sage (or sage & apple seasoning if you can find any which is okay for Dukan)
1 small onion, sliced
2 leeks, sliced
2 celery sticks, sliced
1 red pepper, de-seeded and chopped
1 stock cube dissolved in 300ml hot water (recipe says pork, but use the most fat-free version you can - possibly veg instead)
Salt and pepper

Conso people can add a chopped or finely sliced apple

Trim any fat from the pork chops/steaks.

Sprinkle the flour onto a plate and add the dried sage (or sage & apple seasoning). Season with salt and pepper. Toss the pork chops in this mixture.

Heat a non-stick frying pan and add the onions, leeks and celery. Sauté for a few minutes, then add the red pepper and cook for a minute or so. If on Conso, you can add your apple, too.

Add the pork chops and stock to the pan, bring to the boil, then reduce the heat and simmer for 20 minutes. Turn the chops after the first 10 minutes. The dish is ready when the chops are cooked through and the veg are tender.
