Chinese Salmon

Ingredients


Piece of salmon
Mixed stir fry vegetables
Ginger
Garlic
Soy sauce (could use reduced salt if necessary)
Sweetener (not essential)

I made a marinade of soy, sweetener, garlic and ginger and coated the salmon in it for an hour in the fridge.

Meanwhile I used my new julienne tool to slice courgette, spring onion and used some beansprouts, shredded cabbage and some 'spring greens' (in a bag from tesco).

Wrap the salmon in foil and bung in an oven (about 170 degrees) for 15 ish minutes.

Meanwhile, dry fry onions, garlic and ginger and add soy. When onions are soft add rest of veg and add soy sauce to taste. I kept adding water to stop them sticking and therefore didn't use oil.

Place cooked salmon on top of stir fry veg and consume. Yummer!!!

(I also drank a LOT of water with this to combat any salt retention)
