Hi guys, I do late shifts at work 5/6 days a week and don't get home until 11pm, I have a late lunch and wait until this time for dinner but by the time I get in a just can't be bothered and it is usually a low calorie microwave meal or an omelette. Does anyone have any really quick low calorie / low fat dinner recipes they could share

I have a three-minute meal! A frozen fillet of salmon on a plate with lemon and herbs and some cling film into the microwave for around 3 minutes. Meanwhile, julienne a courgette to make "spaghetti", blot on kitchen paper and then dry-fry (Frylite) in a non-stick pan at a high temperature for around a minute. You want the courgettes hot but not starting to cook as they will start to sweat out their water and you'll end up with "soup" :p Meanwhile, wilt down a portion of spinach.... as I say, the whole thing takes about 3 minutes and is low-cal/low-fat.....

 
A curry! Low in fat as long as you skip the oil, cream etc and good for you as if you use chicken you get protein and with a veg one, you save cals and get full up. The spices also help boost metabolism and it is delicious! Just have a look in the asian aisle in the supermarket and pick up one of the ready made box mixes, fry a couple onions, add the spices, a little yoghurt and veg/chicken and ta-dah! Delicious, good for you and low in fat (also quick!)
