Corned Beef Hash

One of my favourite meals is corned beef hash. You can make it for only 2.5-3 syns a serving. I have been making it like this for years - the only difference is now I use a smaller tin of lean corned beef (Princes 200g is 4 syns for the tin). Pre slimming world I used a standard 340g tin just for the 2 of us.

Ingredients:
200g lean corned beef cut into smallish dice
2-3 large potatoes cut into dice and cooked until tender, then drained.
2 medium onions chopped
1-2 tablespoons Branston Pickle (1 syn per tbs) or any similar pickle
Frylight

Saute the onion in the frylight until softened
Add the potato and corned beef and fry until starting to turn crispy and brown. The corned beef and potato should start beaking down and mixing together. When warmed through add the branston pickle. Continue to fry for another couple of minutes, mixing well.
Season with salt and pepper and serve with a selection of veg. We usually have baked beans and tinned peas cos that's what my husband likes, but you could use tomatoes, mushrooms, peas, carrots etc.

This is my version of the recipe, wife doesn't like the Branston idea so made it like this!
Pete’s Corn Beef Hash

Serves 2

Ingredients

Princes 200g tin Lean corned beef, mashed up (4 syn/2=2 syn each)
2 medium potatoes (ff)
1 onions finely chopped (sf)
100mL skimmed milk (from daily allowance)
2 Eggs (ff)
1Tbsp dried or fresh chives
1Tbsp Brown Sauce (1syn)

Method
Put the onions through a food processor to chop them small. Spray a pan with Fry Light and sauté the onion until soft.
Peel and cut the potatoes and boil until soft. Mash them with a small amount of milk to a smooth mix, add the onions and chives, mix together.
Serve with a fried egg and brown sauce.

Had this for brunch, thanks for the recipe! Hadn't had corned beef hash in years and had a sudden craving! Grated some carrot, mushrooms and courgette in with the onion to make my 1/3 superfree and served with cold baked beans. Delicious :)
 
ooh very nice, we usually have a tin of chopped toms in ours but i have never tried it with branston pickle (yummy) can wait to add a new spin on it :)
