Babybel burgers?

I saw a recipe on here aaages ago for homemade burgers that have Babybel cheeses in the middle, so that when they cook the cheese melts. I'm thinking of trying a few Extra Easy days and I bet these would be great for my family. Does anyone have a recipe for these?
 
I've done these before.

I used extra lean beef mince, all mixed up with salt, pepper, one beaten egg and a finely chopped onion to make the burgers, and literally just pressed a babybel into the middle, before molding the meat around it.

I've found they cook best in the oven on high for about half an hour - they tend to fall apart somewhat if doing them in the frying pan!
 
I had these last night, I put some parsley and mustard in the mixture and didn't bother with the egg, I wish I'd put more seasoning in but otherwise they were lovely and will definitely be a favourite! I made them the night before, used them straight from the fridge and they didn't fall apart at all.

These are the ones I made. I cooked them in a griddle pan for a bit more of a BBQ taste :)

How much mince would you need for 2 people? And is the egg to keep it bound together? would it be one egg per 2 burgers?

A 500g pack of mince made me 6 decent sized burgers. I don't put any egg in mine as I find the burgers hold together well enough without.
 
SIX?! Woah thats good, will have to use meatmince for some other meals as well then as only have 2 mouths to feed and I think burgers for 3 days straight would be a bit silly :p thanks Stevie
 
Sounds yum will have to try these. I've added worchestershire sauce in the normal SW burgers that helps gel it all together instead of an egg.

Skulldilocks you could make a batch of them minus the cheese & freeze until you need them. Then just de-frost & pop the cheese in b4 cooking :)
 
I ended up making 4 out of 500g. big Man Vs Food style burgers. YUM used worcestershire sauce and 1 egg, deffo going to be making this again!!

No problem. What I did was freeze them. I make my own meals at home, so I am only cooking for myself. I had two burgers and then froze the other four in batches of two. Next time I fancy them I can just take them out of the freezer to defrost the night before.

Alternatively, you could split the mince and make your burgers and then use the rest to do a bolognese, chilli, etc.

i had these tonight, but with pork mince.

and i may have topped them with bacon, fried mushrooms and onions and a runny fried egg.
